      variations from French sites -

      1) Cherry-flavoured wine/Guignolet

      1 kg sour cherries
      500 ml alcohol (40%bv)
      1 glass Kirsch
      1 litre red wine
      300 g sugar

      Crush the cherries including pits (stones) and place in a large jar.
      Add the alcohol (40%bv) and macerate for 1 month. Filter and refill
      jar along with sugar, Kirsch and the red wine.

      2) Cherry-flavoured wine/Vin de cerises

      1 kg of black cherries
      3 litres red wine
      500 ml alcohol (50%bv)
      500 g sugar

      Crush the cherries including pits (stones) and place in a large jar.
      Add red wine, alcohol and sugar and macerate for 15 days.

      3) Cherry-flavoured wine/Vin de cerise

      125 cherry leaves (collect leaves just before cherries ripen)
      1 litre red wine
      1 litre white wine
      2 glasses of alcohol
      400 g sugar
      1 vanilla pod
      cinnamon stick

      Macerate ingredient in a large jar for 2 months. Filter and bottle.
