We are holding a camp out the weekend after next that we call "Ancients Assembly". Our host has chosen to forgo the traditional sheep or pig on the spit as he has a friend that grows turkeys.
Apart from the fact that we will have a demonstration on how to slaughter the bird by the grower we plan to spit the animal. We are pretending that it is an exotic (to Greece/ Rome) and was "gathered on campaign". ( I cannot think of any other justification of eating it without hanging it now that I have done a little research).
We plan to spit it and roast it over a fire.
I plan on making a Roman sauce to go with it (I have the recipe)
However I am hoping that some sage here can advise me on doing a really good job with the cooking and serving the beasty at "camp table".
Any preferred Ancient methods, stuffings, sauces ( I am contemplating pork sausages for example as stuffing).
