Generally, the battery switch that comes installed in the loco is of low quality and should be replaced with a better switch to handle the power better.

You can have the installation of the airwire done by a professional if you want or the instructions are very detailed with what comes with the throttle and decoder.
You will also need to source a battery pack and a battery charger system

what all do I need to buy for a decent start (I have a Dash-9 & an
      AC centercab).

ANSWER: ONE T9000 AND TWO AW9D10SS DECODERS, ONE DECODER FOR EACH
      LOCO.

The center cab is older so it doesn't have a plug-n-play board,
      right?

ANSWER: TAKE IT APART AND HAVE A LOOK. MORE BELOW.

      > the switch for track/battery power, but does that affect what I
      need to buy???

ANSWER: NOT REALLY. PUT THE SWITCH IN THE BATTERY POSITION IF YOU
      WANT TO USE BATTERIES.

      > OR....does anyone think that I should go with something else, ie
      > RCS, TE, etc.

ANSWER: I THINK YOU HAVE THE RIGHT IDEA WITH AIR WIRE.

What about sound? What is a Dash-9 without sound, anyway!! Is one
R/C system better or easier or more capatible with a decent (not BIG
      $$$) sound system???

ANSWER: I USE THE PHOENIX 2K2 WITH THE AIR WIRE AND LOVE IT. THE
AIR WIRE MANUAL PROVIDES WIRING DIAGRAMS FOR SOUND CARDS.

What's a poor, low tech boy like
      > me supposed to do??? HELP!!!

ANSWER: GET OUT YOUR CHECK BOOK AND PREPARE TO SPEND SOME BIG $$$.

Should I spend the extra $ to have it professionally installed or
should I try it myself? I'm getting a little stressed over this &
      could use a good laugh!"

ANSWER: THIS YOU MUST DECIDE FOR YOURSELF. YOU WILL SPEND A LOT OF
$$$ IF YOU DON'T LEARN TO INSTALL AND MAINTAIN LOCOS. REMOVE THE
COVER AND TRY TO TRACE THE MOTOR AND HEADLIGHT LEADS FOR A START.
YOU WILL LIKELY HAVE TO CUT THE MOTOR AND HEADLIGHT LEADS AND
CONNECT THEM TO THE AIR WIRE BOARD. GO TO THE AIR WIRE SITE AND
PRINT OUT PAGES 1 THROUGH 4 AND SEE IF YOU ARE COMFORTABLE WITH
DOING THE WIRING ACCORDING TO THEIR DRAWINGS AND WHAT YOU FIND IN
YOUR LOCO. IF YOU UNDERSTAND WHAT MUST BE DONE THEN GIVE IT A TRY.

The answers above are just my opinion,
      Bob
