When I bought my bike at American Cyclery on Stanyan, they did measurements....I remember them taping a weighted string to my knee and stuff like that. This was after I'd selected the bike, when they were setting up the handlebars, stem, seatpost etc. for me.
Test riding ought to give you a feel for whether or not you'll be too hunched over for your taste - that's much more subjective. You might prefer a frame with a top tube that slopes up towards the handlebars, or the bike shop can simulate that by adding spacers on your stem to boost the handlebars higher. You shouldn't ever have to adjust the seatpost height unless your legs grow or shrink. :-) Good luck!

customer for a more custom fit?
