iTunes prefers 600 by 600, and they are very good at thumbnailing the image.
iTunes will change the image if you change the name on the feed, but you
have to allow it a few days to propagate.

I'm setting up my podcast with WordPress and podPress and was making
an iTunes image, 300x300, as indicated in the podPress settings. I
decided to give a double check to iTunes about images specs and saw this
iTunes prefers square .jpg images that are at least 600 x 600 pixels,
which is different than what is specified for the standard RSS image tag.
Is this something new?
I'm guessing they have a good method to reduce these to the size you
see on the iTunes website and still retain high quality. Is that right?
Is the standard RSS image tag still 144x144?
From reading the iTunes specs it looks like iTunes will
automatically change images if I put a different image into the feed
with a new name. Is that right? Does it actually work out that way?
