There are many possible solutions to your problem, depending on what
sort of data you are collecting.
Larry Barello sells a board that would allow you to monitor a variety
of digital and analog values and report them through a serial
connection at any speed up to 115 kbps. His board is designed to go in
a robot so it has motor controllers you would not need, but it's
relatively inexpensive and quite flexible.
