Our Cookbook Featured in Magazine

The VSS cookbook, New Asian Traditions, was featured in the December issue of the Association of Dutch Businessmen in Singapore’s magazine. The issue is now online at http://www.adb.org.sg/en_magazine_latest.htm, pages 21-22. The article features two recipes from the book. You can buy the VSS cookbook at most bookstores, such as Popular, but please call ahead to make sure that it is in stock.

 

 

VSS Donation Cans

New Green Pastures is an organic veg restaurant that has been supporting VSS by placing a donation can near the soup urn, where customers can help themselves to soup to go along with the meals they order. A sign encourages those who take soup to make a donation to VSS. The restaurant is located at the vegetarian oasis of Fortune Centre, at #04-22, Tel: 63368755, HP: 94512799.

 

If you know other veg outlets that might display a VSS donation can, please contact info@.... Money is needed for our education work. For instance, this weekend, we are packing another 10,000 copies of the VSS VCD for free distribution. Contact us if you’d like to help distribute the VCD. For instance, one couple took VCDs to distribute at their wedding dinner. We do ask a donation for large quantities of the VCD.

 

 

Calling All Teachers

The Green Teacher (http://www.greenteacher.com) is a magazine, published in Toronto, for teachers who want to include environmental education in their teaching. A VSS member has been asked to write an article about why and how to integrate vegetarianism into environmental education. If you are a teacher (or you know a teacher) who includes veg issues in their teaching, please share your ideas for possible inclusion in the article by writing to info@.... Also, if you are a teacher and would like to invite a VSS speaker or to use VSS materials (print or video), please let us know.

Looks like Asian vegetarians are very sociable folks. Asia is hosting two vegetarian congresses this year. For the Singapore Biathlon, Sun, 26 March, at East Coast Park (http://www.safra.sg/singaporebiathlon), organizations can form teams of three to participate. Teammates need not run/swim together. VCDs Ready

Last weekend, a team of 20 people, fueled by a hearty and delicious vegetarian lunch, finished packing another 10,000 copies of the VSS VCD, Seeds for a Better World. Most of readers of this Newsletter have already seen Seeds.

Martha Stewart Stops Wearing Fur

Martha Stewart, famous for her advice on food, fashion, and home decorating, has made a 5-min video to explain why she has stopped wearing fur. The video documents the terrible conditions our fellow animals suffer so that humans can make a fashion statement. The video ends with Stewart saying something that applies as well to going vegetarian as it does to not wearing fur, “So much violence in the world seems beyond our control, but this is one cruelty we can stop by being informed consumers.“ By the way, Stewart’s daughter, Alexis, who co-stars on her tv show, The Apprentice: Martha Stewart, is a vegetarian.

 

 

Pesticides

A frequently asked question is: If I eat more plant-based foods, won’t I risk ingesting too much pesticide? The answer is that meat-eaters probably ingest more pesticide than do vegetarians. Why? Because during their short, harsh lives, our fellow animals eat foods treated with pesticides, and those pesticides concentrate in the animals’ flesh. Thus, when you eat meat, you are probably ingesting pesticide that concentrates as it moves up the food chain.

 

AVA inspects food for pesticide level and gives the following recommendation to those who wish to do more: http://www.ava.gov.sg/JAVASCRIPT/FAQfruits.htm.

 

A combination of rinse, soak and rinse will help to remove pesticide residues on vegetables substantially. The rate of removal depends on many factors such as the amount of residue present, technique of washing and rinsing etc. Generally, a 30s rinse, a 15min soak and a final rinse would be effective. It can remove surface residues by more than half the original amount present. When rinsing, pay attention to the base of the stems since dirt or pesticide tend to get trapped there. This is important if you are preparing “you-cai” where the whole intact vegetable will be used for cooking.

Quantum Spirituality

It is not uncommon that spiritual leaders encourage people to move towards plant-based diets. Examples from the East are Sai Baba and Dada J.P. Vaswani and from the West, Anthony Robbins. Next week, another spiritual leader who encourages plant-based diets is speaking in Singapore. VSS will have a display.

One Veg Outlet Replaces Another

It’s sad when a veg outlet closes, but sometimes another veg outlet opens in its place. That’s what happened recently at Fortune Centre, a must-visit veg oasis. A reader reports that Tanaka Vegetarian moved out and Xin Yuan Vegetarian Food has taken its place. The reader recommends the new outlet for its large variety of good food. Help Save the Planet: Go Vegetarian
In a paper delivered at the 2005 American Geophysical conference, researchers reported that the usual American diet (of which 28% is derived from animal sources) creates the equivalent of nearly 1.5 tonnes more carbon dioxide per person per year than a vegan diet with the same number of calories. Seismic Shift in European Attitudes

Human recognition of and concern about the terrible things we do to our fellow animals is growing. This year, the Singapore Food Festival will be held 30 Jun-30 Jul. Last year, VSS participated to a small extent and there was a special Vegetarian and Fruits Jamboree weekend. This week, VSS attended a planning meeting at the S’pore Tourism Board office for this year’s Festival. People who eat more protein from vegetables tend to have lower blood pressure, according to a new study in the January 9 issue of Archives of Internal Medicine:

Court Recognises Chimpanzee as Legal Subject

In a landmark ruling, a judge in Brazil ruled that a chimpanzee, named Suíça, was a legal subject. The two articles above suggest that our fellow animals are, indeed, more like us than we used to think, making it even more unpalatable that we eat them. A reader reports being pleasantly surprised during a visit to Borders bookstore to see three shelves of veg cookbooks, including 8 copies of the VSS cookbook, New Asian Traditions. Other veg cookbooks included New Enchanted Broccoli Forest and Living among Meat Eaters. There are books for all sorts of diets: vegan, raw food, real food, baby food, and low-fat.

 

In a hurry? There’s a book with 30-minute veg recipes. That not fast enough for you? There’s a 20-min veg book too. Can’t get to Borders? Other bookstores, such as Awareness Place at Bras Basah Complex, also carry the VSS cookbook and others, as does the National Library.

Veg Outlet Closings

Many small businesses have a short life span. Sadly, that is also true of veg outlets. The following have closed or will be closing soon. We wish all the best to all the people there who made being vegetarian easier: Vegaan, at Biopolis; Magenta, on North Canal Rd; and Zheng Yu Zhai Vegetarian Restaurant, at 333 Joo Chiat Road (last day, Sunday 19 Feb).

The first session of the VSS Wellness Seminar Series in 2006 takes place Thur, 9 Mar, 8pm-9.30pm. The topic is Why Raw? with Julia Jus, a raw food chef who lives in Chiang Mai and speaks English well: http://www.juliajus.com/about_julia.html. Learn to make and enjoy tasting creative, healthy, organic meatless dishes on Sat, 25 Feb, 3pm-4.30pm with Wendy Yeo. The class is sponsored by True Health and will be held at the Church of St Peter and Paul, 225A Queen St, in the Praise and Worship room/canteen.

Fast Food Can Cause Fast Problems

More revelations about health problems and the fast food industry. McDonald’s recently revealed that their fries contain wheat and dairy, plus more trans fats than previously reported:

However, there is good news in the same report. We can go back to the original fast food – raw fruits and vegetables - an apple (sold by some McD’s outlets) contains about 45 calories and requires only a 0.3 mile walk, and a stick of celery has even fewer calories requires only a 0.013 mile walk. But, walking is fun and good exercise. So, why not take a break from your computer, and walk to the supermarket or wet market and get some fruits and vegetables!

Meal-in-a-Drink Smoothie

When VSS does food demos as part of a talk, we often demonstrate our Meal-in-a-Drink smoothie found on p. 88 of the VSS cookbook “New Asian Traditions.” For instance, later this week, we are doing that for teachers and parents at secondary school in Sembawang. The smoothie is easy to make, flexible in terms of what ingredients to add, and a hit with the people who come to our talks.

Frozen Airplane Food That Tastes Good

A reader who recently returned from a trip to East Asia was impressed by the variety of veg options on the airlines. He requested “no egg, no dairy”, and when the other passengers were given ice cream, he received a thick slice of frozen pineapple. Great idea! Frozen banana is also excellent.

New Date for VSS AGM

There is a new date and time for the VSS AGM. The AGM will be held Sat, 25 Mar, 10am-12noon. The venue remains the same: Bestway Building, 12 Prince Edward Rd, #06-01, Podium A. Everyone is welcome, but only members can vote. No memberships will be sold at the door. Light snacks will be served, and we hope to screen some videos.

Take a Meat Eater for a Meal

Mon, 20 Mar is the first day of Spring in the northern hemisphere and the day the people in many countries are celebrating Meatout Day (www.meatout.org). In Singapore, we’re going to have our Singapore Meatout Week later in the year, probably July.

 

However, we do want to do something on 20 Mar to connect with people in other countries. So, we’re going to have a “Take a Meat Eater for a Meal” day. In other words, on that day (or some day near then), vegetarians take a meat eating friend, family member or colleague for a veg meal. This could be eating out or a home-cooked meal. Reminder - Raw Food Seminar This Thursday

The first session of the VSS Wellness Seminar Series in 2006 takes place Thur, 9 Mar, 8pm-9.30pm. The topic is Why Raw? with Julia Jus, a raw food chef who lives in Chiang Mai and speaks English well: http://www.juliajus.com/about_julia.html. A VSS member who uses a raw food diet was very impressed by a session Julia did on her last visit to Singapore.

Vegetarian Cooking Class – March 20, 21, 22, 23

Genesis Health Food Restaurant, 1 Lorong Telok, will be holding the same vegetarian cooking class on 4 consecutive evenings, March 20, 21, 22 and 23, from 6pm-7.30pm. Featured dishes include granola, waffles and savoury rice. Additionally, there will be health talks by a registered dietician and a registered nutritionist.

VSS sometimes receives inquiries about whether a particular product contains ingredients derived from our fellow animals. Young kids seem to have a special affinity for dinosaurs (for example, the purple one named Barney). So, if you want to convince them that they can grow big and strong on a veg diet, tell them about that the world’s biggest dinosaurs were vegetarians who were much bigger than any of their carnivorous cousins. Sign of the Times – Local

As an old song says, “The times they are a-changing.” This is certainly true in regard to human’s attitudes towards our fellow animals. Most of these signs come from the West, such as laws regulating better imprisonment conditions for pigs and hens who will later be killed for meat.

 

But, there are signs here in Singapore too. For example, have you ever wondered why at circuses here, we don’t see lions, tiger, etc.? The answer comes from our friends at ACRES (www.acres.org.sg):

 

As of January 2002, the Agri-food and Veterinary Authority no longer allows the import and exhibition of performing wild animals in travelling circuses. This is enforced under Part II (Importation, Transhipment & Exportation of Animals & Birds) & Part IV (Prevention of Cruelty to Animals) of the Animals & Birds Act. The statutes are available online at http://statutes.agc.gov.sg.


The ban covers all wild animals. Domesticated animals, such as dogs and cats, are still allowed to be used for circus shows.

 

 

Going to Great Heights to Support Vegetarianism

Bala, a yoga teacher and VSS supporter, participated in the Singapore Vertical Marathon 2006 on 12 Mar. As he did in 2005, Bala climbed Suntec Tower 4 backwards, wearing a chicken head costume and a t-shirt saying, "H51N, Love animals, eat plants" on the front and back. Not surprisingly, Bala drew a lot attention from fellow runners, onlookers and the media. For example, a journalist from LianHe ZaoBao interviewed him on the issue. To support Bala, VSS set up a small booth to distribute free apples (contributed by Bala), as well as our VCDs and flyers. Chris Turner, another VSS supporter, turned up at the booth in a Spiderman suit, speeding up the VCD and flyers distribution, and attracting lots of youngsters. Spiderman briefed them on how a balanced vegetarian diet can boost athletic performance.

 

 

Want To Take Over a Veg Stall?

Someone contacted VSS with news that the stallholder of a veg outlet at Kallang Bahru, Blk 16 is planning to retire and wants someone to continue to provide veg food via the stall. If you are interested, contact Kim Eng at 6741.6418. You may need to call multiple times to get through and be able to speak Mandarin to talk with Kim Eng.

 

 

Ask and You Shall Receive – Vegetarian Food

Some people worry that they can only find veg food at veg outlets, but actually, most food outlets can cook up something tasty for us. All we have to do is ask. Here’s an example from Dawn Kua.

 

I'm writing about Restaurant Ember at Hotel 1929 (50 Keong Saik Road in Chinatown). They are a lovely restaurant but do not have many vegetarian options on the menu. However, every time I've gone, I've had no problem asking them to whip up something vegetarian for me, and invariably it's delicious.

 

Recently, they added a vegetarian entree to the menu, and when I last went a few weeks ago, the manager, Sabrina, mentioned that she felt bad that I always ate the same thing (though I could eat the pumpkin risotto and the tofu with enoki mushroom in a miso sauce every day, not to mention the desserts!); so, she said that they would be adding more vegetarian dishes to the menu!

 

I've found that many restaurants will cook something vegetarian for you if there is nothing on the menu, but Ember has gone a step further. They really do take what their guests like to heart and they have the most genuine and warm service too!

 

 

Birds with Memories like Elephants

The stereotype says that birds have tiny brains, so they must not be able to think much at all. On the other hand, elephants are, according to legend, supposed to have powerful memories. It turns out that birds’ memories aren’t so bad. Here’s a quote from an article on research that found that a hummingbird, “with a brain no bigger than a grain of rice and which feeds on hundreds of flowers each day, could pinpoint the location of flowers it had visited and when the bit of nectar in each would be replenished. Such episodic memory was previously thought to be exclusive to humans.” You can read the entire article at

Veg Outlet Listings on Your iPod or Other Mobile Device

A Canadian student studying at NTU sent everyone a present just in time for Take a Meat Eater for a Meal Day. Here’s what he said in his email to VSS:

 

I came across your website while looking for vegetarian resources, and found your veggie food outlet site very helpful.  To make it easier to work with, I parsed the data into small txt files so that I could have the whole page while in the city.  I have put them all up in a zip file, with instructions on how to extract, so that others can use the information and put it on their iPods.  The link is here: http://www.ariehsinger.com/wordpress/?page_id=53.

Fundraising Fair at Man Fut Tong Hong

The Man Fut Tong Nursing Home (http://www.mft.org.sg) provides Residential, Respite, Day Rehabilitation Centre & Day Care Services. They are open to all regardless of age, gender, race, religion or language. Plus, they serve vegetarian food to their patients. Sun, 26 Mar from 9.30am-6pm, the Home is hosting a fundraising event, with Minister of Health, Mr Khaw Boon Wan, as GOH. VSS will have our usual booth. One new wrinkle is that we’ll be selling our new nut/seed/fruit mix. Give it a try and let us know how it can be improved.

Magazine Café Now Serving Meals

Earlier this month, VSS held a seminar on raw food at Magazine Café. While there, we learned that in addition to drinks and snacks, the café now offers meals to go with its wide assortment of magazines.

 

Here are the details: The café is located on Wishart Road, behind Singapore Soka Association, Grace Methodist Church, and Telok Ayer Chinese Methodist Church, 15 mins walk from Harbour Front MRT station. Talk on Developing Physical and Mental Power – Thu, 6 Apr

AGM Report

The VSS AGM on Sat, 25 Mar, highlighted VSS’ many achievements during 2005, including Singapore Meatout Week 2005, launch of our cookbook, many cooking classes, and a wide variety of other events. It was agreed that 2005 was VSS’ best year yet. The AGM discussed plans for making 2006 even better, including more events at schools, Singapore Meatout Week 2006, and many more upcoming activities that will be announced in future issues this Newsletter. At the AGM, we also debuted our fruit, seed, and nut mix, which we began selling the next day at the fair at Man Fut Tong Home.

 

As to Singapore Meatout Week 2006, it is tentatively scheduled for the 9 days from Sat, 22 Jul, to Sun 30 Jul. Proposals are sought for Meatout events, big or small. Events can take many forms: art exhibitions, cooking demos, talks, tours of organic farms, contests, food hunts and trails, and dinners, just to mention a few. Report on ‘Take a Meat Eater for a Meal’

One VSS Exco member took 7 non-veg colleagues to Just Greens restaurant at 283 New Bridge Rd. (6222.2981) for dinner on Mon, 20 Mar, Take a Meat Eater for a Meal day. His colleagues enjoyed the meal very much and were especially impressed by the creativity of the dishes and the beauty of their presentation. Restaurants such as Just Greens are good places to take meat eaters because many of the dishes resemble meat dishes. For example, they offer “fried fish” made from tapioca and “sweet and sour pork” made from yam.

 

The meat eaters asked quite a few good questions. For instance, one person asked, “Since you don’t eat animal, why do you eat plants? Don’t plants have life too?” The answer given was that, unlike our fellow animals, plants do not have nervous systems. Thus, they probably do not suffer in the way we animals do. Plus, by eating only plants, we cause fewer plants to die. This is because we have to feed nonhuman animals many kgs of plants to derive 1 kg of meat. The colleagues were very grateful for an opportunity to eat a planet-friendly meal in a friendly environment.

The April session of VSS’ Wellness Seminar series focuses on whole grains. Diana David, a registered dietician who holds a Master’s degree in Public Health will explain and demonstrate on Sun, 23 April, 5pm-7pm at Genesis Health Food Restaurant, 1 Lorong Telok, Tel: 6438-7118.

Meatout 2006 Celebrated Abroad

A thousand communities worldwide celebrated Meatout 2006 (www.meatout.org) with educational events ranging from information tables, exhibits, and lectures to cooking demos, receptions, and “lifestivals.” These events took place in 29 countries, setting a new record for Meatout. Countries included Bahamas, Belgium, Brazil, Canada, India, Israel, Italy, Kenya, Mexico, New Zealand, Nigeria, Romania, Thailand, UK, Uruguay, and Zimbabwe.

 

Animal Friends Croatia observed Meatout in 11 cities throughout the country. They set up on busy streets with information tables, food samples, educational materials, and fun activities. Visitors who sampled meat alternatives received exciting prizes such as books, postcards, pins, stickers, and DVDs.

 

 

Vienna Vegetable Orchestra Comes to Singapore

As part of this year’s Singapore Arts Festival (http://www.singaporeartsfest.com), the Vienna Vegetable Orchestra (www.vegetableorchestra.org) will be performing for three nights, 7-9 Jun, at Jubilee Hall. Here’s the blurb:

 

Making  instruments  out  of vegetables, the ensemble from Vienna serves up sounds  never  heard  before  -  in  the  kitchen  or music hall. The sonic potential of a potato, tomato, celery and broccoli is amplified through special microphones. The outcome of this experiment is a most enchanting concert.

 

Versatile musical styles - from house beats, to dub beats and African rhythms - are cooked up with zest and zeal by 10 musicians in black suits. As a new music cocktail is served on stage, a tasty vegetable soup is brewed off-stage for the audience's supper. Tickets are $50, $30, $20. The concert is 75 minutes (no intermission).

 

No, the orchestra members are not vegetarians L. Is their soup vegetarian? VSS contacted them and their answer was, “the cook usually improvises and takes up influences of local cuisine... but the soup usually is 100% vegetarian, no meat/chicken stock.”

Courage Despite Cancer – Mandarin Forum/Workshop

Shan You Counselling Centre and Toa Payoh Community Club are co-organizing a Mandarin forum-workshop series to introduce adjunctive and complementary health care opportunities for cancer patients and cancer survivors. The forum is Sat, 8 Apr, 2pm–6pm. EnviroFest – Participants and Judges Needed

VSS has been invited to participate in EnviroFest 2006, to be held 2-4 June at Toa Payoh HDB Hub. We will be using this forum to raise awareness of the environmental damage caused by meat eating. Besides eating more fruit and veg, we can also help the environment by switching to solar energy. Towards that end, VSS is promoting the Solar Innovation 2005 Environmental Competition to be held as part of EnviroFest: www.si2006.com.sg. The deadline for teams to register for the competition is 13 May. Also, we have been asked to supply judges for the solar competition. Email info@... if you’d might be able to be a judge.

Asian Vegetarian Union Congress Concludes

About 200 people, including many from Thailand, attended the Second Asian Vegetarian Congress in Bangkok. The theme of the congress was "Vegetarianism for Health, Environment and Peace.” Foreign participants came from USA, Canada, Germany, UK and, of course, Asian countries, including Iran. Recent Opinion Piece by Peter Singer

Here’s an excerpt from a recent article by Peter Singer, the Princeton University and University of Melbourne professor, who for more than 30 years has been calling our attention to the plight of nonhuman animals who we raise for meat: 

The overwhelming majority of these animals [chickens] have spent their entire lives confined inside sheds, never going outdoors for a single hour. Their suffering isn't just for a few hours or days, but for all their lives. "Chickens, reared in sheds that hold 20,000 birds, now are bred to grow so fast that most of them develop leg problems because their immature bones cannot bear the weight of their bodies. Professor John Webster of the University of Bristol’s School of Veterinary Science said: “Broilers are the only livestock that are in chronic pain for the last 20 percent of their lives. They don't move around, not because they are overstocked, but because it hurts their joints so much'"

For example, when you click on a house, you learn that according to one U.S. study, house values within a five-mile radius of hog farms decreased by $0.43 for each hog. That’s because of all the air and water pollution caused.

 

 

Do You Know Anyone with a Nature-Deficit Disorder?

Perhaps one reason why some people are willing to eat meat, despite all the suffering meat production causes for our fellow animals is due to these people’s estrangement from nature, or what this education article calls a ‘nature-deficit disorder’: http://www.edutopia.org/magazine/ed1article.php?id=Art_1477&issue=mar_06. The remedy: find ways to link with nature, even if it’s only a walk in the park or growing some plants in your flat.

 

 

Asthma – Diet Link

Two recent studies in the journal Thorax suggest that eating more fruits and vegetables may lessen asthma symptoms: http://thorax.bmjjournals.com/cgi/content/abstract/thx.2004.024935v1 and http://www.nutraingredients.com/news/ng.asp?n=66505-tomatoes-carotenoids-asthma.

 

For instance, one of the studies reported that women whose daily consumption of  leafy vegetables exceeded 90 grams experienced a 22% lower risk of asthma than did women whose daily consumption of leafy vegetables was less than 40 grams.

Change of Gathering Venue on 14th April: To provide a better service for the participants of the Desaru Trip, VSS is chartering a 44-seater bus to shuttle participants between Tanah Merah MRT and Changi Ferry Terminal. The service schedule is as follow:

 

14 April (Fri), 8.40am from Tanah Merah MRT Exit B [near taxi stand, bus leaves at 8.40am sharp] to Changi Ferry Terminal.

 

15 April (Sat), 4.30pm, from Changi Ferry Terminal, to Tanah Merah MRT

Metta Charity Walk cum Family Carnival

Metta Welfare Association helps the community in many ways, including providing education for special needs children. Last year, we mentioned the vegetarian café run by students from their school in Simei. Research Suggests Going Veg Helps Control Weight

A study involving 22,000 people suggests that although as we become older, we are likely to gain weight, but a veg diet, plus exercise, can restrict that gain: http://news.bbc.co.uk/1/hi/health/4801570.stm. At the same time, vegetarianism needs to be part of an overall approach to good health. The BBC article quotes Ursula Arens, spokeswoman for the British Dietetic Association, as stating, "A diet of chips and chocolate is 'vegetarian' but not healthy or likely to help slimming."

Medical Doctor, Modern Dancer, Short-Listed Author, and Vegetarian

The past two weekends, The Sunday Times has brought news of high-flying vegetarians. First, it was prominent legal expert K.S. Rajah, who became vegetarian after hearing about cows shedding tears during their slaughter. This past weekend, we learned that Vyvyane Loh, whose debut novel is short-listed for the International Impac Dublin literary award, is a vegetarian in addition to being a doctor and a dancer. Her novel, available in bookshops, is titled ‘Breaking the Tongue’ and takes place in Singapore during the Japanese Occupation.

 

We have asked Mr Rajah for an interview to learn more about how he became a vegetarian. How I Became a Vegetarian – Alex Hershaft, a Founder of Meatout

Last year’s Singapore Meatout Week was a success and we are planning for this year Meatout Week, to be held in late July. If you’d like to help, contact info@.... Meatout began in the US. Here are excerpts from the story of one of the founders. VIP stands for Vegetarians in Paradise (http://www.vegparadise.com), and AH is Alex Hershaft, the interviewee:

VIP: What events in your life led you to vegetarianism?

AH: As far back as I can remember, it never made sense to me to hit a beautiful, innocent, sentient animal over the head, cut his body into small pieces, and then shove the pieces into my mouth. I suppose it was initially an aesthetic conviction - not too different from that of the ladies in Queen Victoria's England that led to the early anti-cruelty statutes. In 1962, during my two-year stay in Israel, I stumbled across the ritual sacrifice of a baby goat to celebrate the birth of a Druze baby. The bitter irony of that act was the last straw I needed to change my diet. I remained a closet vegetarian until attending the 1975 World Vegetarian Congress in Orono, Maine (USA), when I decided to spend the rest of my life promoting a vegetarian diet.

VIP: When did you become vegan? What led to that transition?

AH: I didn't become a vegan till 1981, when I helped found the animal rights movement at a conference I arranged in Allentown, PA, and learned the bitter truth behind production of milk and eggs. From today's perspective, the more appropriate question would be "what took you so long." The fact is that, in those days, veganism was a very novel concept. There was a widespread notion that animal products were a necessary component of a healthy diet, and it was rather difficult to get vegan foods consistent with Western tastes. Many animal protection leaders were not vegetarian, served animals at their conventions, and did not even provide a vegan option.

VIP: We understand you are a child of the Holocaust. How did the Holocaust affect you and your family?

AH: The Holocaust affected my family by killing them all, except for my mother who died of natural causes in Israel in 1996. I became convinced that my debt for my survival was to dedicate my life to the pursuit of justice, in general, and justice for the most oppressed - farmed animals - in particular. The Holocaust experience, including the hiding, crowding, caging, cattle cars, brutality, and routine of mass extermination has promoted my empathy for what farmed animals go through every day.

VIP: How do your family and friends react to your vegetarianism?

AH: My mother and daughter both embraced it, initially out of respect for me and eventually out of conviction.

VIP: Could you tell us about your education?

AH: I wasted the best years of my life, from age 18 to 27, getting a Ph.D. in chemistry as a misguided memorial to my martyred father. Since then, having paid my 'debt,' I have been pursuing my quest for justice.

VIP: How are you using your education in your present career?

AH: I am not. The experience that has done most to provide me the 'can do' attitude, and thus, to prepare me for my current responsibilities came during my employment with several Washington consulting firms in the 70s. These days, I invariably advise potential young activists who ask for schooling advice to come to work for us or one of the other activist animal rights organizations. Indeed, a number of FARM 'graduates' hold leadership positions in our movement.

VIP: One of FARM's programs, the Great American Meatout, has become an annual tradition. How did it begin? What influence has this event achieved?

AH: The Great American Meatout was launched in January of 1985 in reaction to National Meat Week, now defunct. Last year, there were more than a thousand events in all 50 states and two dozen other countries, supporting proclamations by 30 governors and mayors, and extensive media coverage. Nearly everyone outside the movement that I've ever talked to has at least heard of it. It provides information on the benefits of plant-based eating for those who don't have it and an excuse to change their diet for those who do. Several mainstream health advocacy organizations have since started similar campaigns, most notably the '5 a day' program of the National Cancer Institute. VIP: Could you tell us about CHOICE, one of your programs directed toward children?

AH: CHOICE (Consumers for Healthy Options In Children's Education) introduces plant-based meals and nutrition education in our nation's schools, with the assistance of local activists. The program lay dormant for several years, but we have just hired a very capable new director, who is reactivating it. For information on CHOICE see http://choiceusa.net

VIP: Can you tell us about the activities of the Global Hunger Alliance?

AH: We launched the Global Hunger Alliance last year to promote plant-based solutions to world hunger at the World Food Summit in Rome. We were fortunate in recruiting a director who has formed a world-wide coalition of 90 supportive organizations, which is now pretty much independent from FARM. Metta Charity Walk cum Family Carnival

Metta Welfare Association helps the community in many ways, including providing education for special needs children. Letter to the Forum Editor

On 25Apr, a VSS officer published a letter in the ST Forum Online Letters:

 

I refer to the article "Climate change: 2 nations can make difference" (ST, April 22). Kyoto Protocol, Singapore adds to its reputation as a green country. To implement the Protocol, individuals and the government should consider that our eating habits can affect the environment as much as our means of transport and energy generation. In particular, we can slow climate change by eating less meat. Two main links exist between meat consumption and climate change.

One, meat consumption is inefficient because we have to feed an average of about five kilos of plant food to animals to derive one kilogram of meat. To use an analogy, think of how much food a growing child eats before gaining a single kilogram. One implication of this inefficiency is that more forests are destroyed to grow the food fed to animals, thereby worsening climate change.

Two, going back to the five-to-one ratio, what happens to the other four kilos of plant food that aren't turned into meat? A major proportion becomes waste, which causes air, soil, and water pollution. This waste can contain methane and nitrous oxide. Scientists at the U.S. Environmental Protection Agency estimate that these two gases have greater global warming potential than do carbon dioxide. Per molecule, methane traps more than 21 times more heat than carbon dioxide, with nitrous oxide absorbing 270 times more.

The environmental hazards of eating meat are why the Worldwatch Institute lists reducing meat consumption as one of its ten ways to go green. No sacrifice is involved in eating less meat, as we have so much delicious non-meat food to enjoy here, not to mention the health benefits of eating more fruit and vegetables.

In our last Newsletter, a reader called people’s attention to the veg stall in the staff canteen in Terminal 1 of Changi Airport. Vegetarian in China Turns 120!

China Daily, China’s national English Language newspaper, reports that the person who the Guinness Book of World Records calls the World’s Oldest Person, and who just happens to be a life-long vegetarian, recently celebrated her 120th birthday. Du Pinhua lives in Leshan in Sichuan province. Besides being vegetarian, her longevity may also be due to the fact that, according to people in Leshan, she is an easy-going, contented person, who does not become involved in arguments. http://www.chinadaily.com.cn/china/2006-04/26/content_577134.htm.

How I Became a Vegetarian – Vyvyane Loh

As mentioned in this eNewsletter earlier this month, Vyvyane Loh (http://www.vyvyaneloh.com) is a unique combination of dancer, medical doctor, and author whose debut novel ‘Breaking the Tongue’ has been short-listed for the whose debut novel is short-listed for the International Impac Dublin literary award. Dr Loh is currently lives in the U.S. She kindly agreed to an email interview with VSS.

 

1.      When did you become a vegetarian? Was it an overnight change or a gradual process?

 

I have been a vegetarian for 3 years now, but before that, I wasn't a heavy meat-eater anyway. I'd mainly eat meat if we went out to dinner and someone else ordered it or if I was a guest in someone's home. Otherwise I was pretty much vegetarian so when I made the 'switch', I hardly noticed it. The main difficulty is when I go out to eat. People seem to think 'vegetarian' means you only eat vegetables. I have a hard time making them understand my protein needs.

 

2. Why did you choose to be a vegetarian?

 

My main reason for being vegetarian is my concern for the ethical and humane treatment of animals. Additional reasons: I believe that a vegetarian lifestyle is healthy and also much more sustainable for the earth and our growing global population.

 

3. How did family/friends/colleagues react?

 

I have many friends who are vegetarian and one of my brothers is vegetarian, so no-one even blinked when I became one.

 

4. What is your perspective as a dancer on being vegetarian?

 

My energy level as a dancer hasn't changed. If you educate yourself you can get all the nutrients you need as a vegetarian.

 

5. What is your perspective as a medical doctor on being vegetarian?

 

As a doctor, I think it's a healthy diet--high fibre, low-fat (depending on cooking methods). As a doctor you are trained to preserve and respect life; being vegetarian is a natural extension of that.

 

6. How is being vegetarian in the U.S. different from being veg in  Malaysia/Singapore? Some say it's easier here, while others claim it's easier there?

 

I think there are probably more vegetarian choices in SE Asia and yummier choices as well, but I'm biased because I love Asian food. I don't like some of the vegetables the West seems so fond of. For example, I hate bell peppers, zucchinis (tolerable), brinjal (yuk--I know this is common in S'pore and Malaysia too but it just tastes worse here) and barely cooked/uncooked onions. Give me kangkung and Chinese broccoli anytime! And lentils taste so much better in curry sauce or some kind of Indian Dhal soup. And don't get me started on tofu. I don't think Americans know what to do with tofu.

 

As an aside, besides being vegetarian, I try to use products that haven't been tested on animals. Animal-testing in research for serious medical problems still makes me cringe but I can see the need for that. I cannot, however, condone animal-testing for vanity problems (genetic research to find the magic pill for preventing obesity, for example--that's clearly a lifestyle issue, not one a pill will solve!) and for the use of cosmetic products. Ugh. Kill/maim animals for the sake of some magic cream so we can feel/look younger/prettier--disgusting. Sure, many products we use now were tested on animals but we should be more enlightened and stop the practice today. It's sad that there are still cosmetic companies out there who test their products on animals.

 

7. Do you try to influence others to become veg? If so, how?

 

I don't try to push anyone into becoming vegetarian but I try to answer their questions and to be supportive if they are interested in becoming

one.   Deep down inside, I wish the whole world were vegetarian though.

Unfortunately, the chance of that would be the same as world peace! And come to think of it, a vegetarian world might not be too different from a peaceful one!

VSS’s Wellness Seminar series continues with a Mandarin talk and demo on Vinegars and Enzymes to be held Monday, 29 May, 8pm-10pm, at Chyuan Shiang E.L.Tech, 92, Lorong 27, off Geylang Road, S. 388196 (near Aljunied MRT), Tel: 674.674.63.

 

The speaker is Wang Song Ji. Mr Wang has been fermenting vinegars and enzymes for several decades. In addition to a talk, he will also demonstrate how to ferment fruit vinegar. Participants are welcome to bring their own fruits. The first 9 to register can receive hands-on experience under Mr Wang’s guidance. Admission fee = $5 per person. Family Day to Raise Funds for SBFC – 21 May – Eunos MRT

Going veg can prevent or delay certain illnesses, and, as the saying goes, “an ounce of prevention is worth a pound of cure”. But when people do fall ill, free clinics, such as the Singapore Buddhist Free Clinics (SBFC), provide an important line of defence: http://www.sbfc.org.sg/en/events.htm. This Sun, 21 May, 9.30am-5.30pm, SBFC is holding a Family Day in the open field outside Eunos MRT to raise funds for its operations and to promote vegetarian food. VSS will have a booth there.

Foie Gras Is a Faux Pas

Here’s a letter that a VSS Exco member sent to the Straits Times Forum page:

 

Recently, foie gras, the French delicacy made from the fattened livers of ducks and geese, has been receiving publicity in Singapore.  Perhaps readers are not aware that foie gras (pronounced fwah-grah - French for ‘fatty liver’) has been restricted in at least 10 countries and the state of California. Why? Because during the artificial fattening process used to produce foie gras, the birds are force-fed by pushing metal tubes down their throats. After two to four weeks of this, when their livers have grown to about five times the normal size, the ducks and geese are slaughtered. Indeed, modern factory farming has reduced our fellow animals to mere objects, and foie gras production represents a particularly clear example of this.

 

Yes, we humans have the brains to do just about anything we want to our fellow animals, whether it is ramming rods down ducks’ throats or fattening chickens so that they are ready for slaughter at only 6 weeks of age, but can’t we put our brains to better use? Can’t we develop food that is to-die-for without making our fellow animals have to die for the titillation of our taste buds? In fact, we already have such food, from the great taste of fresh fruits and vegetables to vegetarian versions of local treats, such as laksa and redang. Plus, this food is much healthier than fattened meat.

 

Thanks to recent advances in research, even more evidence is available showing what people with pets already know; our fellow animals, including birds, are thinking, feeling beings. Given this knowledge, plus what we know about the health dangers of meat, let us enjoy food in a true way by saying goodbye to foie gras and saying hello to tasty vegetarian dishes.

Bright Hill Temple, 88 Bright Hill Road (MRT = Bishan) is offering a third 8-week course on vegetarian cooking. This time the course will be led by Oh Chong Fah, who has done many classes and demos for VSS. The course meets every Sunday from 4pm-6pm at the 2nd floor Ven Hong Choon Memorial Hall, beginning Sun, 25 June. Cost is $50/pax per course. For more information: 6849.5332. VSS Participates in Singapore Food Festival

This year’s Singapore Food Festival (SFF) (http://www.singaporefoodfestival.com) will be held the entire month of July. This is why Singapore Meatout Week (www.singaporemeatout.com) will also be held in July, 22-30. To highlight Meatout Week events, VSS took part in the SFF Media Conference on 15 June. At the conference, Bombay Restaurant chef Amit Verma was awarded 2nd prize in the Indian new dish category for his creation, Kuri Mushroom.

 

VSS would like to thank the following for providing food for the VSS booth at the Media Conference: Five Loaves (swiss loaf and stolen [a German pastry]), Lotus Restaurant (dim sum), Quantum (vinegar drinks) and Yogi Hub (brown rice cake).

 

 

More VSS VCDs Ready

Recently, an industrious group of VSS members and supporters gathered to pack another 10,000 of our informative and hard-hitting SEEDS VCD. That brings the total to 80,000. The VCD is for free public distribution, and more than a few people have told us that SEEDS was the major reason why they went veg.

Singapore Meatout Week Exhibition at Central Library

VSS will be holding an exhibition on the 7th floor of the Central Library from 17-30 July. Opening hours are the same as those of the rest of the library 10am-9pm. The exhibition will be titled: ‘Seeds of a Joyous Heritage’. It will explore how the food choices we make today shape the heritage of future generations in four ways: our own health, the health of starving people, the well-being of the planet, and the happiness of our fellow animals, such as chickens. Panels, videos, sculpture, food demos and more provide food for thought on how Singapore can become a model for the world by enjoying food in a true way.

Additional Evidence that Veg Diets Help Us Achieve a Healthy Weight

A review of 87 scientific studies found that plant-based diets can be effective for weight loss. Furthermore, the weight-loss effect does not depend on exercise or calorie-counting, and it occurs at a rate of approximately 1 pound per week. This research emphasizes that people can enjoy unrestricted portions of nutritious, high-fiber fruits, vegetables and whole grains and still maintain a healthy body weight without feeling hungry.

Pesto Pasta Recipe

Here, courtesy of our friends at Meatout (www.meatout.org), is a tasty pasta recipe.

Pesto is a classic Italian herb sauce typically prepared with basil and garlic -- ideal for use in pasta or salads. This dish demonstrates how basil can enrich any meal, bringing to it both flavour and nutrients. Basil is a notable source of vitamin A, iron, calcium and potassium. It also adds a bold, satisfying flavour to the dish, transforming pasta and veggies into an invigorating, low-fat meal.

 

Ingredients:

3 cups fresh basil (or 2 cups basil & 1 cup spinach)
3-4 large cloves garlic
1/4 cup walnuts, pine nuts, or raw cashews
1/2 container silken tofu (about 6 ounces)
2 Tbs. water
1/2 tsp. salt (or to taste)
1 lb. whole wheat pasta
1-2 large tomatoes, chopped
additional nuts (to taste)

 

Directions:

Cook pasta according to package directions and rinse with cool water.

In food processor, chop garlic and nuts until finely minced.

Add remaining ingredients and process until smooth.

Toss pasta with sauce and tomatoes (and any other seasonal veggies); sprinkle with nuts.

Ms Sim is a biogenic health consultant and therapist (1980) with one diploma each in acupressure, anatomy, physiology/massage, and aromatherapy & sports massage, and a certificate in optimum nutrition.

Petition for a United Nations Declaration for Animal Welfare

The World Society for the Protection of Animals (WSPA) has launched a new initiative called "Animals Matter To Me" to achieve global recognition that animals matter, that they can feel pain and can suffer and that we have a responsibility to put an end to cruelty around the world. This is a vibrant video with a collage of snapshots of the food in Singapore. It features our multi-cultural environment and invites everyone to make Singapore a true food paradise… a place where we have food that is not only rich in variety and great in taste, but also food that is healthy, food that respects and celebrates life, and food that returns the kindness of the Earth

 

Prevention (30 minutes)

This video addresses some of the prevalent life-style diseases. Health experts explain why these diseases occur and reveal how they can be reduced if only we understand and make the right choices.

 

Reasons (8 minutes)

This video features the various compelling reasons for being a vegetarian. It includes personal accounts from celebrities, leaders, relevant professionals and average people.

Letter to The Straits Times Forum Page

Unfortunately, this letter by a VSS Exco member was not published.

 

I refer to the article ‘Food for thought: The ethics of eating meat’, in The Straits Times of 17 June, in which Professor Peter Singer explains how the modern meat industry treats our fellow animals as mere objects, rather than the thinking, feeling beings they are. We in Singapore are fortunate to have so many alternatives to eating meat. Indeed, Singapore boasts an enviable quantity of vegetarian restaurants and hawker stalls, large and varied supplies of fresh vegetables and fruits, and tasty vegetarian options at almost all non-vegetarian eateries. Plus, the situation continues to improve in at least two ways. First, vegetarian eateries are offering healthier fare. For example, a group of vegetarian food stalls now offers its customers brown rice. Second, non-vegetarian eateries are developing new vegetarian options. For instance, one group of sushi restaurants has introduced an extensive vegetarian menu at six of its outlets. Yes, we in Singapore can be a model for the world of how to enjoy tasty, healthy food without subsidizing the mistreatment of our fellow animals.

Surprisingly, one of the top 15 movies in the U.S. is a documentary titled ‘An Inconvenient Truth’ on global warming featuring former vice-president and unsuccessful presidential candidate Al Gore. Sushi Restaurant Offers Menu Veg

Sakae Sushi has 30 outlets in Singapore offering kaiten (conveyor belt) sushi, with the option of also ordering from a menu. At six of their outlets, there is now a special veg menu featuring 12 dishes, ranging from the traditional to the innovative. The six outlets are Changi Airport North T2 Viewing Mall, Eastpoint Mall, Funan Digitalife Mall, Lot 1 Shopper's Mall, North Point Shopping Centre and Parco Bugis Junction. By Popular Request – Organic Tour Repeated

At the end of last year, VSS organised a very popular 1-Day organic tour to organic farms, shops and restaurants. For Singapore Meatout Week 2006, the event is being repeated on 29 July, 8am-8pm.

 

This is an educational bus tour for beginners who are learning to adopt a healthy lifestyle. The farm visits in the morning will allow participants a chance to break away from the hectic atmosphere of the city, breath in revitalising rural fresh air, and understand the hardship of the farmers raising organic produce for the general well-being of people in Singapore. The afternoon section of the trip includes practical sessions for beginners to learn where and what to buy for healthy home-made vegetarian food preparation. The trip also features visits to two delicious, healthy vegetarian cafeterias/restaurants which will surely provide a lot of cooking ideas and healthy tips for the beginners.

Well, later the letter did appear, in The Sunday Times of 26 June, p. 38. Learn Veg Cooking from a Champion

David Jackson Tan won the Flavors of the World Cooking Competition at the Singapore Food Expo held 28 May at Singapore Expo. Organizers were Health Promotion Board, People's Association and the Singapore Food Manufacturers' Association. David’s entry was one of the two vegetarian dishes, that were competing with 10 non-vegetarian dishes in terms of taste. David's winning combination was Stuffed Portobello Mushroom, Bubble & Squeak (Mash Potato) and Colourful Vegetables (Stir-Fried).

Want Strong Bones? Eat Your Fruit & Veg

In a study reported in the 2006 volume of the American Journal of Clinical Nutrition, researchers at the University of Surrey, UK, explored the association between fruit and vegetable intake and bone mineral status in a cross-section of people, including participants from five age and sex cohorts (adolescent boys and girls, young women and older men and women). They found that increased fruit and vegetable consumption may strengthen bones.

Singapore: Veg Capital of the World?

An happy reader wrote to say, “Singapore now lays claim to being the vegetarian capital of the world. According to the VSS web’s list of veg food outlets, there are 311 eating places exclusively serving vegetarian food. This works out to one eatery every 2.2sq.km, or more than one eatery for every square mile. Not only are the numbers impressive, but the sheer variety of veg food choices is astounding.”
 
The reader proudly continues, “Imagine the above as a headline resulting from a press conference. Our government and Tourist Board would love another first. It would give food publications something to quote about our fair isle. Visitors coming for the IMF-World Bank conference, the Integrated Resorts, and various MICE (

This is an educational bus tour for beginners who are learning to adopt a healthy lifestyle. National Library Exhibition – 15-30 July

VSS will be holding an exhibition on the 7th floor of the Central Library from 15-30 July. Opening hours are the same as those of the rest of the library 10am-9pm. The exhibition is titled: ‘Seeds of a Joyous Heritage’. It explores how the food choices we make today shape the heritage of future generations in four ways: our own health, the health of starving people, the well-being of the planet, and the happiness of our fellow animals, such as chickens. Panels, videos, a sculpture, food demos and more provide food for thought on how Singapore can become a model for the world by enjoying food in a true way.

VSS Wellness Seminar for July

The VSS Wellness Seminar for July focuses on chiropractic health treatments. On Sun, 30 Jul, 3pm-4.30pm, Dr Serene Ng (MChiro, UK) will be speaking at the Living Space, 17 Hong Kong St (near Clarke Quay MRT), Tel: 65 340 340.

 

Chiropractic is a treatment modality believed to be effective in resolving musculoskeletal complaints. Apart from treating structural and muscular complaints and reducing pain levels, people receiving chiropractic care have reported better sleep, better appetite, and better management of stress levels.

 

About Speaker:

Dr Serene Ng achieved her second degree in chiropractic studies (MChiro) at the Anglo-European College of Chiropractic, Bournemouth. In the past, she provided consultations to numerous nurseries and schools in Bournemouth. As Dr Ng is also a believer in improving one's health through healthy living and natural therapy, she currently provides nutritional support and exercise therapy in conjunction with spinal manipulative therapy to keep her patients in optimum health.

In the Newspapers

Recently, two outspoken vegetarians published letters in the two local newspapers taking issue with a bus ad promoting a hamburger as a Vegetarian’s Nightmare. This past Sunday in The Sunday Times, a reader wrote in to respond, placing the blame for children’s health problems on parents, not eateries. We agree, in part. We should all be responsible consumers, learn as much as possible about good health (for example, at the Health Promotion Board’s website - http://www.hpb.gov.sg) and other consequences of food, and let our food dollars be a tool for change.

 

Another bit of news from the newspapers is that last week, two VSS Exco members were interviewed by two reporters, one from The Straits Times and the other from the Wednesday Straits Times supplement Mind Your Body.

Kampung Senang Family Detox Camp

The objective of Kampung Senang’s family detox camp is to enable people to fast with organic fresh vegetable & fruit juice so as to clean and detox the body and mind.

Venue: Civil Service Aloha Loyang Resort, Jalan Loyang Besar

How I Became a Vegetarian

Many years ago, I was sitting next to an American [F1] lady on a flight. After seeing the VGML sticker on her meal, I asked her what had made her become a vegetarian.

 

She talked about the bad energy and chemicals produced when animals are slaughtered and how these harm us. I didn’t switch right away to the veggie option, but she got me thinking.

 

The message was reinforced when I met a client in my last job who manufactured machines that produce chicken feed. He told me how the chickens were given chemicals and inhumanely treated in order to produce the maximum output to meet the growing demand within the shortest possible time. This got me thinking a bit more. 

 

Then, three years ago, I met the Dalai Lama, a great advocate of vegetarianism. I listened to him speak about compassion and the Buddhist principle of no killing, and I will always remember him saying that compassion ends the moment we touch meat. Compassion is respect for every being’s right to be happy.

 

That was it. I decided to become vegetarian - a lifestyle and an attitude towards life that accords with my values.
