If you make this now, it will be ready to use for Christmas. To get the
full flavor, it has to set for about 20 days.

THYME, LEMON PEEL & BLACK PEPPER VINEGAR

1 LARGE SPRIG FRESH THYME
1 LONG SPIRAL OF FRESH LEMON PEEL
2 HEAPING tABLESPOONS TRI-COLORED WHOLE PEPPERCORNS
2C WHITE 'WINE' VINEGAR

Don't try substituting regular white vinegar in dressings that call for
white wine vinegar. Trust me, they do not taste the same at all!

Place all of the above ingredients into a clean, boiled glass bottle.
Preferably a corked wine cottle. Let it set in a window sill and shake
gently every so often.

This alone is very attractive, but adding a few pieces of raffia tied in a
bow around the top give it added flair! This also makes a great gift for a
fellow cook.

Use on fresh green salads.
