I expect most of you already do this, but I remember a way I used to prep for the huge battles that often wiped my party out:
scrolls.
I would get a scroll-case for each magic user, and fill it with useful spells. Haste (if you're ok with the age penalty), Barkskin, etc. It takes a while to create the spell at max level, rest, then create another spell and repeat, but do this for all your magic users right outside the area that triggers the battle. Then, cast all of your spells from the scrolls, and step into the battle. This way, your characters will all start out super-buffed, giving them a better chance of surviving those early rounds.

Safety in numbers did seem to help against single foes. The blue dragon went down quickly, for example; as long as it doesn't get on a spell streak, it can only take down one party member per turn, while the rest can keep dishing out Magic Grip x7 (average damage 28). Similar deal with the mad troll, tho damage control did require a resurrection trip to the town temple.
OTOH anything in herds sucks. Went poking around the inn basement, got almost everyone knock'd out by carrion worms, had to have Waagel drag everyone else's unconscious asses back up, ran into a bunch of giant rats on the trip, was very thankful of lerning Limited Phase and being able to hide behind the pillars.
