Either stainless or carbon Randall is going to hold edge well. Just be sure it is sharp. Consider 6 inch the minimum for all around hunting knife. bp ... ...

Actuall I have found carbon sharpens easier. But a stainless may hold an edge a little longer and will not tarnish like carbon. Two knives is a better system,...
