Hi all


Just found out on Friday that my son Patrick has been diagnosed with Scoliosis. 
He will be going to a pediatric spinal physician to see if he needs to be fitted
for a brace to be worn at night.

his
  curve is now at 20% and if it goes to 45% he will need surgery.  I was
diagnosed with scoliosis when I was younger but I was able to do
exercises to strengthen my muscles and never needed a brace or surgery. 
  Hopefully, the specialist will recommend the same but only he will
know.

Hope everyone else is doing well.

today for dinner we are having stuffed peppers with italian bread.

The earthquake was right in the area where giant pandas live.






Most pandas in this area were rescued. Particular attention was given to the
Babies.

All the pandas were scared.









The photos were taken right after the earthquake and during rescue effort.









All the pandas were released back into the wild and it was noted that all of the
bears stayed together.

Prep and Cook Time: 15 minutes
Ingredients:

1/3 lb cod fillets, cut in half
2 TBS honey
2 tomatoes, diced
1 onion, sliced thin
1 red bell pepper, diced
1/2 cup low-sodium chicken or vegetable broth
2 TBS minced basil
2 TBS minced parsley
sea salt and pepper to taste
Directions:

Slice onion and let sit for 5 minutes to bring out its health-promoting
properties.
Combine honey and tomatoes in a mixing bowl.
Healthy Sauté onion and bell peppers for 2 minutes.
Add 1/2 cup chicken or vegetable broth, cod fillets and tomato mixture.
Cover and cook over medium heat for 3-5 minutes or until fish is cooked.
Add minced basil, parsley, and salt and pepper to taste. Serves 2

When life gives you leftover corn on the cob, make these savory patties with the
kernels. Serve them for breakfast, lunch or dinner
Prep Time: 15
Total Time: 35
Servings: 4

Ingredients:

2/3 cup cornmeal
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 large Organic Valley egg, beaten
1 1/4 cups Organic Valley buttermilk
1 tablespoon corn oil
1/2 cup shredded Organic Valley cheddar cheese (sharp or medium)
4 tablespoons finely chopped green onions
1-2 tablespoons chopped cilantro
1 cup cooked corn kernels
Additional corn oil for cooking pancakes
Tomato salsa
Organic Valley sour cream




Instructions:

1. Whisk cornmeal, flour, baking powder, salt and pepper in a bowl. Mix egg,
buttermilk and corn oil in another bowl; stir in cheese, green onions, cilantro
and corn kernels. Mixture can stand at room temperature up to an hour.
2. Heat a griddle or large, heavy skillet over medium flame for several minutes.
Reduce heat to medium-low and brush cooking surface with corn oil.
3. Cook pancakes in batches: Ladle batter onto hot griddle, 1/4 cup per pancake.
Cook until first side is golden brown and pancakes have set well on the bottom.
Flip pancakes and cook on other side until done. Serve hot with salsa and sour
cream.

Hi,


Sorry that I have not posted in a while.  Things here got a little hectic.

First
  of all, my son Patrick who is 13 has been diagnosed with scoliosis.  He
  has a 20% degree and will see the specialist on May 4 to see what needs
  to be done if anything.

should his curve go to 25%, they will
fit him for a brace.  If the curve goes to 45%, he will need surgery so
we are hoping that they can try something else before any type of
surgery.

Also, my husband has been diagnosed with diverticulitis
as well as a hiatus hernia.  He has to follow a strict diet now to
prevent the hernia from going into esophageal cancer. 

Things at
  work are depressing.  My immediate manager has lost her position at
work due to downsizing and we are waiting to get the name of a new
manager.  Her manager was also
  released due to downsizing.  Hopefully, the new manager will be just as
  good.

I worked in my flower garden last weekend.  Last fall, I
planted hyacinths as well as crocus and pansies and iris.  The iris are
growing larger now and the hycianths and crocus are in full bloom.  I
have already decided what I am going to grow in my two vegetable gardens
  which will be:  tomatoes, cucumbers, green beans and carrots.

1.My favorite bird is the blue jay and humming birds, I have been reading alot

2.  I do not travel since I had my stroke, but love to read articles about
traveling so I guess I tavel by arm chair.
3.  When my lated husband and I were trucking we stayed in motels at truck
stops, Best Western, Red Roof Inn, Days Inn, Super 8, Motel 6.  When I went on
vacation when I was working before I was married I used to go to Prince Edward
Island here in Canada mostly stayed at Bed and Breakfasts then really enjoyed
myself.
