1 . show him the ropes    to explain  to somebody . , to demonstrate the
procedures or rules for doing something.....

Example:-  The young man needs someone to explain
and demonstrate his duties to him.)

2. Learn/Know the rope        to know or understand or   the learn the
procedures or rules for doing something.....


Example:-  Jenny is new to this work , she   has just started -- it will
take her   a    week or two to learn the ropes.


These two idioms are very easy  and are being used very much in good
conversation:

Don't try to learn both the idioms at a time  first read one idiom try
to remember  it once or twice  then read the other idiom because if you
read both the idiom at a time you may get confused....

unexcitable: cool-headed, level-headed
cautious: sober, cool-headed, level-headed, cool

Basically level headed means   a  rational,  cool and  sensible
person..

It could be more clear with this  Example:-

Jenny is a very level-headed person.   { That means   Jenny is very wise
and sensible person.....}
