times have changed! Our food is not the same as what people canned 50 years ago. The soil is different, too. So are air and water. To keep our families safe from Botulism and other bad stuff in the modern world, the NCHFP has updated their recommendations scientifically over the years ... just like your doctor has. Please keep your friends/families safe! Only use SAFE, modern, approved methods for preserving your food! It could save your life, or the life of someone you love.
