Subject: Fabulus Chicken Breasts

I did this in a regular oven, but I know you could make it in a DO.
It was delicious. My hubby got home last night from trucking for 2
weeks and I made a
nice dinner for him.  He doesn't usually like chicken, but I got
rave a review on this one.

1 Package of skinless, boneless chicken breasts
soy sauce
4 oz. sesame seeds, toasted
1/4 c. bacon bits, toasted
1 c. bread crumbs
1 c. flour
2 t. garlic powder
2 t. salt
pepper to taste


Pound the chicken breasts between 2 pieces of wax paper with a heavy
skillet, pound till flat. Pour soy sauce in a loaf pan, dip breasts
in soy sauce. Mix dry ingredients in a shallow baking dish and then
dredge the breasts into the dry mixture.  Roll them up into nice
tight rolls, place on a cookie sheet, sprayed with "Pam"  Bake 30  -
45 minutes till done.
Serve with a white sauce over the top.

Brian,
   Sorry it has taken me so long to get back to you about cooking beans.  I'm no
expert, but, people do love my beans. This works for me.
   I always use dry beans. I just shake my head when people say they make good
beans by opening a can and then adding other ingredients to them.  "To each his
own"  is what I say, but for me, I like doing most everything from scratch.
   Just take your dry beans, I like to use Pintos,  soak them overnight, drain
off that water, cover them with fresh hot water, add a chopped oinion, a clove
of garlic, or more, whatever you like.  Add salt, pepper and the best thing you
can do for beans is to add crisp, cooked bacon pieces, and all of the grease
from cooking the bacon.  That is the secret to good beans.  Just cook them till
they are done. You can't go wrong cooking beans this way. You can also add
crushed red chile pepper if you like them to have a bit of a "kick" .  You can
then use these beans as refried, by simply mashing them up with some of the
liquid, or use them in any casserole recipe or with cornbread or just eat them
plain!  Thats how my hubby likes them. Just expirement. Let me know if I can

     a ball!  I always feel that I was born 100 years too late for my way
     of thinking! Thank God for this group, it lets me be who I want to
     be!

     This sounds really good. How many coals do you think? You didn't list a
temp to use and would a 12" DO do the best? This recipe sounds like it would

Hi Betty,

You might try substituting the second addition of water for fresh chicken
stock.  After the beans are done, I add the fresh boiled chicken back into the
pot and let it stand for 15 or 20 minutes before serving. Yum Yum

I think that before you are too critical of the canned beans method of
preparing my Southwest Ranch Beans, you should at least try it.

Hey all,

I had sent a few posts earlier and recently noticed I was not getting any mail. 
Got bumped for some reason.  yahoo at its best.  I noticed lots of discussion
about the pumpkin dump cake and just wanted to say that I prepared it for a
bunch of teenagers on a canoe trip last month and they couldn't get enough of
it.  It was a big hit, especially since the weather was a little cool and they
were thinking fall.

Going to paddle three more days next weekend, just the wife and I and we have
pretty much reduced our cookware to a coffee pot, something to heat water and a
DO.  We are having a blast with new recipies and finding ways to be creative
with it.  Thanks for all the help, and it is good to be back.

Hey Sue,
     For temps of 325 to 350 - in a 12"   8 to 10 coals on bottom and 12 to
17 on top. For your 16" pot, same temp. use 12 to 16 on the bottom and 18 to
24 on top. That should get you started. Enjoy and keep your pots hot....

Now hold on there Roy........for a guy that ain't even
got the willpower to attend the DOG, you sure are
trying to stir it up for the rest of us. These ladies
will have a FABULOUS time just being able to enjoy the
cool pines with us wonderful men. I don't have any
problem doing dishes, mind you. But if I dirty it,
I'll sure clean it. You just relax this weekend and
sit in your lazyboy recliner, beckoning your wife to

The information that Roy gave you is great stuff. But, also remember that D.O.
Cooking is not an exact science. For instance if you are cooking and it is windy
outside. The wind will cause your heat to be transfered from one side of the
oven to the other. You will need to rotate your oven often, or you will need a
wind block. This will help you to get much more even cooking. There are no
quick, set it and forget it answers with D. O. cooking. It is the cooking that
is the adventure, not the food. Oh yes!  The food is great, but I find alot of
joy just in the feeling of accomplishment in the cooking it in the Black Pots.

the 2 most wonderful women in my life, have both made sure that my hands spent
lots of time in warm soapy water. I am one man that is not scared of Hot Soapy
Water. But then I can also do a great job at getting the dishes dirty, cooking

Thanks for the tip about adding chicken to the bean pot.  Sounds like it would
be a good thing to try.  Now lets not get down on me too bad about my comment on
beans from scratch.  I did say "to each his own"  and I'm not opposed to a can
of pork and beans once in awhile. I just said I like to make them from scratch. 
I would be glad to try your SW Ranch Beans. Happy Cooking! And by the way, ITS

I baked it at 350* and served it with rice and made a white sauce and drizzled
it over the top.  It was very good.  I can imagine that a 12" would work, or a
14 if you made a larger batch of it. Let me know how you like it.

   I did this in a regular oven, but I know you could make it in a DO.
   It was delicious. My hubby got home last night from trucking for 2
   weeks and I made a
   nice dinner for him.  He doesn't usually like chicken, but I got
   rave a review on this one.

   1 Package of skinless, boneless chicken breasts
   soy sauce
   4 oz. sesame seeds, toasted
   1/4 c. bacon bits, toasted
   1 c. bread crumbs
   1 c. flour
   2 t. garlic powder
   2 t. salt
   pepper to taste


   Pound the chicken breasts between 2 pieces of wax paper with a heavy
   skillet, pound till flat. Pour soy sauce in a loaf pan, dip breasts
   in soy sauce. Mix dry ingredients in a shallow baking dish and then
   dredge the breasts into the dry mixture.  Roll them up into nice
   tight rolls, place on a cookie sheet, sprayed with "Pam"  Bake 30  -
   45 minutes till done.
   Serve with a white sauce over the top.

The best thing we have found for temperature control is a thermometer.
There are round grill thermometers sold by Taylor, as well as several
companies who make square ones. You lay these on the top of your Dutch
Oven (yes, in the coals) and they tell you the oven's temperature. If it
is low, add coals. If it is high, take some away.



If you can't find a grill thermometer, you can also use a plain oven
thermometer. Bend the stand part flat and lay it on the oven lid.
