Hi everyone,

It has been a while since anyone has posted, I hope you are all well!

I wanted to let you know that my husband and I have started teaching family
karate lessons. This is a fun, high-energy class for ages 5 and up (our 6 year
old is loving it!) Kids can participate on their own or with parents. Shotokan
Karate is a positive, fun, non-contact activity that promotes confidence and
focus, and stresses non-violence.

Classes are downtown at Burnley-Moran Elementary, near Martha Jefferson and 250.
Please email me or call 409-2126 for more information! Our web site is
http://cvillekarate.com

We have instructed at UVA for years, and have seen an interesting correlation
between karate students and vegetarians, so please pardon the shameless plug! I
hope some of you will try it out!

Take care,
Ellen

We've been quiet for a while. Hope everyone is well. Maybe when
spring comes and we get out of hibernation, we can have a picnic
potluck at a park or something.

As fall arrives, I'm finding that we're in need of warm breakfast ideas.  Yes, we do oatmeal, but I'd like other ideas as well that are a little less carb heavy than pancakes and waffles, and a little less trite than eggs and toast.  Ideas?  Please e-mail me directly, and I'd be happy to post a summary to the group.
Looking forward to yummy breakfasts!

I have a few friends in town that buy health food in bulk from Neshaminy Valley

They deliver to Charlottesville, even frozen and refrigerated foods. You can
split cases of
stuff with friends if it is too much to store all at your own house.

Hello list! Thanks to Bruce for reminding me this list exists.

One thing that I think would be helpful is suggestions for cheap
meals. Everyone is cutting back, and I know Amy and I are looking for
ways to stretch our grocery dollars. I've been living off of
Morningstar products for years, but they've recently gone up 40 cents
in price, and they almost are never on special any more.

So, one way this list could be useful to me is for suggestions of ways
to cook healthy and nutritious meals in bulk. And, heck, maybe we
should return to having low-key potlucks again. I'd love to host them.

Hey Bruce,

Great question. We hosted a few potlucks, which were a lot of fun, but since no one else seems
to ever want to or be able to host, we have kind of stopped putting forth the effort. Recipe-sharing
has been helpful for some, I think.

We are up for participating, but I think we are too busy to do any more organizing... I do hope
someone else has the inclination to do so!

My husband does all of our cooking which is pretty much 100% vegetarian.  Occasionally he will eat meat when we go out to dinner but we find it is too messy and smelly to cook at home.  Another plus to being a vegetarian family!

One meal that we do frequently (or rather he cooks and I eat) is a veggie/fake chicken stirfry.  Morningstar farms makes really cook fake chicken and steak strips that are perfect for this.  We mix that with frozen or fresh veggies and some sauce and seasoning.   If time permits we will eat with brown rice.  You can find these strips in the frozen section at Pantops and Giant.  Not sure if the strips contain egg or dairy products so may not be vegan.  I think that alot of meat eaters probaby would think it was real chicken if they tried it.

As for feeding the little ones, our 3 year old eats pretty much anything we try.  I just always tell him that Mommy really liked this and he likes what mommy likes so try it.  90% of the time that works.  Again morningstar farm makes veggie corndogs that we all really like (even our 11month old!) and are easy to fix.  We usually cook them in the toaster oven so they get a little crisp.

And my absolute favorite easy meal is fresh or frozen broccoli with the Morningstar Farms riblets.  These are SOOOO delicious!!!  I have my whole office of meat eaters hooked on them.  The sauce is perfect and the texture is really nice.  Again these can be found at Target and maybe Giant too.  If you haven't tried them I strongly recommend you do.

And no I don't work for Morningstar Farms :)  There products are all consistently good and easier to find at some of the mainstream grocery stores.  I've had bad luck with some of the Yves products.  Their fake sausage or bratwurst was really gross, like spongy tissue.

Sounds like alot of us have younger children so I look forward to meeting some of you at the next potluck/picnic.

Happy Friday

Denise

Hello All!

A few of my favorite things to do with tofu are:

~ drain extra firm tofu, then chop or mash it to make "egg salad".
just mix w/ vegenaise, mustard, finely chopped white onions, finely
chopped pickles, s&p
~mash firm or extra firm tofu, then mix w/ fresh herbs and maybe some
parm. cheese to make a ricotta-like substitute for stuffing into
shells or manicotti
~use silken tofu to make "cream" sauces for pasta... i can post my
fave recipe for this later

On tofu:

I like to fry the heck out of it and then put it in everything. I cut
a block of extra firm tofu into little cubes, and then cook them in
oil for about 25 minutes or so, which makes the tofu kind of crunchy.
Then I'll throw it into whatever I'm making. Goes nice in everything
from pesto to Thai (easy meal to make) to curry to tomato sauce to
pretty much anything.

I've been a vegetarian for nine years, and frankly, I sustain myself
on fake meat products. I need something to take the place of the
physical substance of meat. I stopped eating meat for health reasons,
but still miss the texture of meat in a lot of ways. So, that's why I
like to experiment with tofu, tempeh, fake ground beef, that seitan
stuff, and more.

I don't like the fake cold cuts, though. For whatever reason, they're
way too salt.

But back to tofu. Fantastic Foods does a nice tofu scramble mix, which
you can crumble over tofu to simulate scrambled eggs. If you're still
doing eggs, you can also supplement with one or two to make it hearty.

There's a lot of other neat things I'd like to try with tofu. There
are a lot of really nicely flavored versions out there, available at
IY and other such places. We had a great panang curry with thai
flavored tofu the other night. We added another section of tofu,
unfried this time, and served it over saffron rice. So far this
yielded us three meals!

However, we're still struggling with what to feed our 2 and a half
year old daughter. Amy?

Hi Rebecca & all --

Okay, first of all, I never introduced myself when I joined a couple weeks ago.  I've been a vegetarian for a while now -- over 10 years, plus far longer without red meat, and like Rebecca, I recognized quite a few names on this list!  I have two boys who are almost 7 & almost 5, and a daughter who will be 2 this summer.

Rebecca, my husband isn't vegetarian either, though he quit eating red meat about 6-7 years ago.  Basically, we struck a compromise about our children as my oldest was reaching the age where we needed to figure something out.  I wanted to raise him as a vegetarian, he had suggested no red meat.  I was willing to give a bit, but he also realized he couldn't continue eating something that the kids couldn't, so he gave up red meat at that point.  He comes from meat-eating midwest stock (2 uncles and one set of grandparents are Kansas farmers) so this alone was a big step, and he's stuck with it.

My kids have asked a lot of questions about why I don't eat meat.  My 4 year old voluntarily became a vegetarian about 5 months ago, after months of occasional questions that got pretty specific (most recently: "Does it hurt the chicken when the farmer takes the eggs?  Does it hurt the chicken to lay an egg?")  We talk a lot about food in general -- where it comes from, what the terms on packages mean, how food helps/hurts your body, local, organic, etc -- not preachy, but just as far as why we buy certain things and not others, or shop certain places.  Beyond that, I've let the boys make their own choices, though we never introduced meat with any of them until they actually asked for it (my almost 2 year old has never had a non-veggie item).  I firmly believe that even very young children can comprehend this kind of information and make their own choices -- they may not get the nuances or some of the more complex reasons for vegetarianism, but they can understand a lot.  My oldest has chosen to eat meat (though he also has never had red meat) and I've let that be his choice.  He knows where meat comes from (rather specifically) and understands issues about how animals are raised and cared for, at an age-appropriate level.

As far as how we deal with it at home, I don't cook meat, period.  If my husband chooses to grill chicken, I don't argue as long as it stays on "his" side of the grill.  But as I do 95% of the cooking, and all of the shopping, we basically only eat vegetarian meals at home.

On the tofu question -- marinate it ahead or buy the pre-seasoned kind.  Tofu soaks up any flavor it's soaked in.  Tempeh and seitan are other options that work well in stir-fry dishes.

Hope some of that helps--

Allyson

Oops!  The correct date us listed on the HMN website but not cool to hear it is wrong on albemarle family!  I had no idea as we are on AF by proxy because body*mind*spirit (yoga studio where we hold our meetings) posts their schedule to AF...  Guess they forgot to change our meeting although they definitely know about the change of date, just an oversight I'm sure.  Anyway, we are for sure on their schedule next tue the 15th at 7:30 - topic is the naturally clean home (green products, making your own, etc).

I'll post full details when I get to an actual computer!  :)

Hi Denise and all-

I am also sorry to have missed the picnic - we were (and still are) out of town as it is my kids' spring break.

Denise, I am the leader of the local chapter of the Holistic Moms Network - please let me know if I can answer any question for you!

Are any of you members of the Holistic mom's group?

Glad I asked.  I think it still says the meeting is for tonight on Albemarle family website.  Keep me posted if you do reschedule for next week.

Talk to you soon

I tried to fond someone to run the meeting this week but many of our regular members are also out of town so no luck.  We are holding the meeting next week instead.

I'll post details later today for those interested.

Sorry we didn't get the message in time either. We did have a fun
lunch at Greenleaf on our own though, and the kids enjoyed the
playground - it was great weather!

Hope to catch you next time,
Ellen

Hi all,

Sorry we couldn't make it this weekend - we had a
ton of out-of-town guests visiting. Hopefully we will
be able to make it to the next gathering!

Sorry we didn't make it to the get together. I work on Sat. mornings,
so when I saw the time change I knew we would be there too lste. =( We
would not have arrived until 11:30 or so, and I wasn't sure how long
people would be there. Hope to make it next time!

Hi there,
For those of you who are interested in the Veggie Families park
playdate today, we have decided to change the time to make it a
morning playdate instead of a lunchtime meal playdate. Due to the
expected rain today, we've changed the meeting time to 10am and added
a rain location. (Who wants to risk trudging around with hungry kids
in the rain at lunchtime? Not us!)

Veggie Families playdate
NEW TIME: *** 10:00am *** Saturday 4/5/08
Location if it's NOT raining: Greenleaf Park

Just in case... The rain location **ONLY IF it is raining/drizzling
at 10am**: Discovery Museum (Downtown Mall)

Apologies in advance to anyone who goes to one location while everyone
else is at the other. (Doesn't that always happen when rain locations
are a factor? Oh well.) I'm headed to Greenleaf because it's not
raining at my house. Hope that's right! : )

Also, we'll schedule another lunchtime playdate and BYO picnic
gathering for May or June, and we'll build in a raindate for that.

I posted this change to PNOC, but I regret not thinking to post it to
this list! Duh, Christine. :( I assume everyone here is subscribed
to PNOC, but that might be an incorrect assumption. My humble
apologies for the extremely last minute notice if you didn't get this
message yesterday on PNOC! See you in less than an hour?

Sincerely,
Christine G.

We're a new family to the list too. We just moved to Charlottesville in
January. We have two kids, seven and thirteen. We're lacto-ovo vegetarians,
but we end up eating practically vegan fairly often. We used to live in a
rural area where chicken farming was the main business, so we're looking
forward to meeting some Charlottesvillain veggie-lovers at the picnic!
