Subject: Mom’s Cornbread Dressing

Mom's Cornbread Dressing

On Thanksgiving my family serves cornbread dressing. Here is my
mother's recipe vegetarian style:

Bake about 3-6oz packages of cornbread according to instructions.
Crumble cornbread into a casserole dish. Brown 1 ½ cups each of onions
and celery. Add to the corn bread along with some green onions for
color. Add 3t. poultry seasoning (this is a spice not a broth so it is
vegetarian) and 1 ½  t. pepper. Add about 3 slices of wheat toast
breadcrumbs. Moisten this mixture with 3-4 c. of vegetable broth and 3
eggs. Bake at "turkey temperature" until the top is golden, but it is
still moist.

Similar to mine only I used crushed pineapple. Yummo! I also use red apples with skins on : p

pulse till still in small chunks. Put in fridge to cool.

long island tea punch

1/2 c. Gin
1/2 c. Rum
1/2 c. Triple Sec
32 oz. Lemonade
32 oz. Coke

Directions:

Mix all of the above together and serve over ice.

Hi all!,
Well for us it's going to be simple..Ham (sorry I can't stand turkey) sweet potatoes, green bean casserole yada yada. This is a busy week for us at our pizza place. Everyone comes up the hill to spend Thanksgiving at their cabins..Who wants to cook Wed?? And by Saturday they are sick of turkey/leftunders..so that's extra business for us.  Pray for lots of snow too. We need the skiers!

Cheffy you are awesome! Thanks for giving me the confidence to try this.  I guess like Julia Child once said "The only real stumbling block is fear of failure. In cooking you've got to have a what-the-hell attitude." So...what the hell!
 
I checked out your blog and wow! We really need to get this group hopping again. I miss everyones goings on.
 
Okay here's my question for the day. Actually it's a couple of 'em.
First..anyone ever do any baking at altitude? Have any tried and true cake, bread, pastries etc recipes? I did get the book "Pie in The Sky" which has been helpful but would like some more recipes. A killer sticky bun recipe would be great!  I ask this because we just bought a pizza place up near our cabin which is between 5800-6000 ft. elevation. http://www.shaverlakepizza.com/  This place is tiny but does very well. Anyhoo, my second question is we only have a double pizza oven (propane) and there really isn't room for a regular oven. I'm not quite sure how low this oven goes down to but I know it goes at least 350 F
Anyone ever make baked goods in a pizza oven?  I am clueless about this. I have heard of people making cookie pizzas (BORING!). Can it be done? Should I just go for it and try? I suppose anything is possible.....

Anyway, not too bad for a first attempt huh? White almond sour cream cake with lemon curd filling. I also made a half sheet cake but it had raspberry filling. Do you know what its like to split a half sheet cake into layers? It aint easy. Oh, and did I tell you that when you go to pick up a sheet cake that is filled you better have some good support underneath or you will get a major earthquake in the center. It didnt show when on the table but when you tried to pick it up .....Ugh...... And that's the rest of the story.....

Roasted Almond....infused the butter...then cooled it back to a happy state...

The secret is not breaking down the butter...roast your almond and then add it to soft butter not broken down butter...

add 1 t of Vanilla (or whatever other flavor you would like to induce...I like Almond Extract versus the vanilla, it adds to the amaretto thingy...or you can eliminate the amaretto and just use almond extract)

Cream all of the products and then slowly add 3 T of good milk...if you are using store bought milk then I suggest half and half...

Add a little more milk if you are using it for icing...

Real buttercream melts in your hands real quick like and I have hot hands (cha cha cha...)  and you use a prachment paper cone which I'm not used to either. Anyway, not too bad for a first attempt huh? White almond sour cream cake with lemon curd filling. I also made a half sheet cake but it had raspberry filling. Do you know what its like to split a half sheet cake into layers? It aint easy. Oh, and did I tell you that when you go to pick up a sheet cake that is filled you better have some good support underneath or you will get a major earthquake in the center. It didnt show when on the table but when you tried to pick it up .....Ugh...... And that's the rest of the story.....

Yeah it's  pretty bad I have to yell HELP!!!  to get people to post huh? lol
I'm doing great. The kidlets are now 14 and 11 and are still driving me nuts! But I love my boys so guess I will keep 'em for awhile. How many granbabies you have now? Any more to list?
I'm working part time at the school doing "lunch supervisor duty" which is pretty much yelling at kids on the playground during lunch time to not tackle each other and to give Billy his ball back,,lol
Been doing a lot of baking on the side (ssshhhhh...) to make some extra$$$ Its fun and I am loving it. But it sure would be nice to have double ovens, a bigger kitchen, viking ovens etc etc etc.. Hey, it's nice to dream.....For my birthday last week I got a top of the line 6qt kitchen aid standup. Its awesome. Still getting used to that bigger bowl though. Ive been using my 4qt forever it seems. Hubby has a year until retirement. Not sure how I feel about that yet. Thank God he has hobbies. lol
Other than that.... it's pretty much the same ole stuffs.
What have you been up to Cheffy? You are always on the go! Havent had a sec to read your blog yet but intend to.
