RECIPE FOR TRADITIONAL MEXICAN
CHRISTMAS, WEDDING,SHOWER and QUINCENERA COOKIES

HAWAIIAN WEDDING CAKE

INGREDIENTS for HAWAIIAN WEDDING CAKE:

2 c. flour
2 c. sugar
2 eggs
1 c. coconut
1 tsp. baking soda
1 (20 oz.) can crushed pineapple
1 c. chopped macadamia nuts

DIRECTIONS

Preheat oven to 350 degrees F.

Sift together all dry ingredients:
Flour, sugar coconut, and baking soda
Slowly add the eggs, crushed pineapple
Mixing by hand all the while.
Continue mixing as you add the
chopped macadamia nuts

Pour into 13x9 inch un-greased pan.
Bake at 350 degrees for 40 minutes.
Let cool completely before icing.

INGREDIENTS for ICING:

1 (8 oz.) pkg. cream cheese
2 tsp. vanilla
1/2 c. confectioners' sugar
1 stick

Use a hand mixer on slow speed.
Cream the butter, cream cheese and confectioners' sugar.
Add the vanilla.
Spread on completely cool cake and decorate.
Refrigerate.
