Hi,

This message is for Carl Wright, Weldon (Pete) Ermis, and anyone else interested in the Ermis/Hermis/Hermes families in Texas.  Thanks to information provided by a couple of folks on this list, I was able to get in contact with Tom Hrncirik again. He is a genealogist (among other things) who has been researching these families.

From Tom I wanted to know if he was submitting an article on the Ermis/Hermis/Hermes families to the Czech Family History book currently being compiled by the Texas Czech Genealogy Society (with a submission deadline of January 31, 2005.) If he wasn't, I was going to try to write one myself.

Since then I have had an e-mail response from Tom in which he wrote that he has already submitted an article on "the immigrant family of Frantisek and Mariana Hermis/Ermis that immigrated to Praha and their children."  He also added that he had not gone into a great deal of detail.  He said that he would send me a copy of the article so that I could decide if I wanted to submit a separate article.  After reading the article, I may submit on the line of Franz Louis (FL) Ermis--but, I am not sure I have enough information.

I also asked Tom about the Ermis/Hermis/Hermes genealogy book he is compiling.  He said that work was underway to figure out how all the families are connected; so, it still has not been finished.  He also said that they were thinking about having a great Ermis family reunion prior to the publishing of the book.

If anyone wants to contact me about this, please contact me at srektorik@.... I do not receive mail from this website.

Sincerely,

Susan Rektorik Henley

Hi Nan,
Attached is the recipe I use for Apricot Dumplings (Merunkove
knedliky). This works well for me but does not use a yeast dough. I'll
send that recipe (prune filled with poppy seed topping) next, after I
type it up - my favorite dough!
The third one, coming later, uses a traditional potato dough
(similar to Frances Barton's Sisky dough).

Apricot Dumplings - Merunkové knedlíky - Marillenknoedel
Ingredients:
1lb fresh apricots
Sugar cubes (1 for each apricot)
1/2 C butter or margarine
1 C fine dry bread crumbs
3 Tbsp powdered sugar

Dough:
1 C water
2 Tbsp butter or margarine
1–1/3 C all-purpose flour
2 eggs

Notes: This is a typical pate a choux dough for making cream puffs or profiterols.
Adding a drop or two of Amaretto or other flavorful liquer to the sugar cube adds a nice touch. I often make these with fresh Italian prune plums when in season. Then you call them "Svestkove knedliky" (Shvest•koh•veh knehd•lee•kee) or Zwetschgenknoedel.

Cut each apricot in half and remove pit. Then put apricot halves back together with a sugar cube between each pair of halves.
To make dough, in a suacepan, combine water and butter or margarine. Bring to a boil; stir until butter or margarine melts. Add flour all at once; beat with a wooden spoon until mixture leaves side of pan and forms a ball. Remove from heat. Let cool for a minute. Beat in eggs, 1 at a time, beating dough until smooth after each addition. Shape warm dough into a long roll; cut in as many slices as you have apricots.

To complete dumplings, wrap each dough slice around a sugar-cube-filled apricot. Let dry 5 minutes. In a large saucepan, bring 3 quarts salted water to a boil. Add dumplings, reduce heat and simmer gently about 10 minutes. Drain well; keep warm. Melt butter or margarine in a skillet; add bread crumbs. Cook, stirring, until golden brown. Roll dumplings in crumbs; dust with powdered sugar.
Makes 6 servings.

Doubrou chut'.

What a fun topic for a thesis!

I have two Texas Czech cookbooks from the 1960s. The first is "Our
Favorite Recipes." It was published by the Christian Sisters Society of
the Taylor Brethren Church in 1963. Many of the people in this
congregation came from the Vsetin region in Moravia, a stronghold of
Hussite protestants. This book contains the kolac recipe of the Taylor
Christian Sisters; for many years they baked thousands of kolace every
month and sold them to raise money. It also contains my grandmother's
astonishingly good sour cream cake and sour cream icing recipe. There
are also two Moravian molasses cookie recipes, several pickle recipes,
and--my favorite--a kapanky (egg drop dumplings) recipe. My mother made
kapanky very often; she would drop the kapanky dough (flour, egg, and
salt mixture of a runny consistency) into chicken broth that usually
also had onion, tomatoes, celery, and lots of parsley. So delicious. A
little like Chinese egg drop soup, except the Czechs always used flour
in the mixture. Most of the other recipes are American.

The second book is called "Our Favorite Recipes." It was compiled by the
Christian Sisters Organization of the Austin Brethren Church in 1966.
This one has a couple of sauerkraut salads, a recipe for potato
dumplines with prunes (sisky), poppy seed cake (this was the kind of
cake my father always wanted for his birthday; it has lots of
poppyseed), an old (19th century for sure) recipe for
"Great-Grandmother's Oatmeal Cookies," something called "Czech Apple
Strudel," and my other grandmother's Christmas cookie recipe that she
copied from a 1920 issue of "Physical Culture Magazine." It is similar
to the Moravian molasses cookie recipes in the Taylor book.

I would be happy to copy these books and send them to you if you think
they would be useful. I also have several family recipes I would be glad
to share. For example, my mother's incredible dill pickle recipe (cold
pack, flavored with garlic, dill, and mustang grape leaf), rice pudding
with prunes, my mother's rye bread recipe, my grandmother's caraway
cheese recipe (there was recent discussion of this type of cheese on
this site), my mother's heavenly chicken and dumpling recipe, and Mary
Mrazak's recipe for chocolate cake (a great Czech cook from south Texas).

This has gotten to be kind of long-winded. I love this food so much it's
hard to say only a few words. Let me know if any of this might be
helpful to you.

Oh! I forgot one of my favorites! Nelsonville Stew! My father was the
preacher at the Nelsonville Brethren Church during the 1940s and 1950s.
One of the yearly church dinners featured a poultry stew, similar to
stews served in many rural areas of America. Some places this stew would
be made with squirrel. In Nelsonville, the cooks made it with turkeys,
potatoes, lima beans, corn, and chili powder (Gebhardt's, I believe).
They made it outdoors in big vats over an open fire.

Did I mention the mutton? You see, I could go on and on. I better sign
off now.

I second that idea or at least post the recipes for the dishes that you named.  I would especially like to see the recipe for the cheese with caraway seed.  My mother used to make the "egg drop" soup just like you described making it.  When I was still living at home and she was making this soup, I had no experience with Chinese food so imagine my surprise later in my life when I was first was served egg-drop soup at a Chinese restaurant.

I'd be honored to join Rick Garza (yummy apricot dumplings) and others on this site in posting yet more recipes. About the cookbook idea: My brother, sister, and I have enthusiasically, but sporadically, planned to put together a cookbook for our family. Whenever we manage to do this I'll let you know. We love the food, but we also love the food stories. Like the time my sister and her husband made sauerkraut according to my father's telephoned directions. They bought 50 lbs. of cabbage (sometimes she remembers it as 100 lbs.) at a roadside produce stand on Hwy. 183. They shredded all this by hand and then layered it with salt in a 40 gal. plastic trash can (our father said don't use metal!), weighing it down with bricks placed on plates. They did this in their garage during a scorching Austin summer. Well, it got way too hot. By the second day a nasty smelling foam seeped out around the plates. Several days later the smell reached the neighbors. My sister and her husband ended up triple bagging the whole batch in heavy plastic and setting it out for garbage pick-up.

The caraway cheese recipe--a winner, I promise--is from my grandmother Olga (Susen) Pokorny. She spent most of her life on a cotton farm near Taylor. What a great cook she was. Her cream cake should be in the Smithsonian. Her tiny egg noodles were perfection! The cheese recipe I have consists of notes I took in the 1960s while she explained to me how to make it. This is the narrative form:

Take four cups of cottage cheese. Tie in cheesecloth and hang to drain well. When dry, put in a bowl and mix with 1/2 teaspoon salt and 1/2 teaspoon baking soda. Let sit for about two hours. Add 1 tablespoon caraway seeds and 1 tablespoon butter. Place in a double boiler. Cook, stirring occasionally, until it strings. Stir in cream, up to a cup, and cook 2 or 3 minutes more, but be sure not to boil. Pour in a glass container and put in refrigerator to cool.

I made this recipe several times many years ago. I don't remember how long the cooking took but suspect it may have been somewhat lengthy. Of course it's worth it. This cheese is very best served room temperature, on rye bread.
