As far as cooling and maintaining such a large volumn of wort I intend
to ferment in smaller containers. I also have access to 55 gallong
containers that I think will make excellent fermentors, so once the
initial brewing is done I am going to break the fermentation down to
the smaller containers, then into a climate controlled building to
ferment. I do not know how much yeast I will need, I do not know how
much of anything yet, that is why I am looking for help.
