Thanks for the answer. I will find those sites and check them out. As far as cooling and maintaining such a large volumn of wort I intend to ferment in smaller containers. I also have access to 55 gallong containers that I think will make excellent fermentors, so once the initial brewing is done I am going to break the fermentation down to the smaller containers, then into a climate controlled building to ferment. I do not know how much yeast I will need, I do not know how much of anything yet, that is why I am looking for help.
I just can't pass up this big brew but it is not something that I have to rush out and do today. The brew pot is not going anywhere so I have some time to get some home work done. When I make the brew I will invite you guys up for a glass of beer, I think I will have enough to go around and it is not far from your home stompoing grounds, maybe thirty five miles.
