Hi Ariel,  The control surface deflections are found on page 15-2 in the instruction manual. They are:  Elevator      Max up/down 30/25

... They are in a table in the Builder's Manual, in the chapter that covers preparing for the first flight. My manual is at the hangar, so I can't tell you
