Last call for Lab Night this Monday... We've already got a good crowd and are almost at capacity, so if you would like to attend and haven't already responded, please let me know ASAP... If I've already received your response, there is no need to reply again.
 
Right after sending out our Lab Night announcement several weeks ago, we found out that North One 10 was voted "Best Restaurant in North Dade" by the readers of New Times, so a gastronomic treat is certainly in store for us.

<<It's been a year since our original haunt, Biscayne Wine Merchants Bistro, went into hibernation and LaBORatory Night relocated to The Ark. We plan to continue our vinous experimentation there in coming months.
 
But here at LaBORatory Night HQ, we do enjoy the occasional break from our routine, so, at the suggestion of our esteemed Chairman Emeritus, on Monday, June 5th, we're taking the show on the road once again, this time to North One 10 restaurant, in the spot that once housed the venerable Il Tulipano, a stone's throw from LaBORatory Night's original North Miami locale.
 
Owned and operated by the husband and wife team of Dewey & Dale LoSasso, the contemporary American cuisine of North One 10 has been praised in the Sun-Sentinel and was recognized by Miami New Times as the Best New Restaurant of 2005.
 
Chef Dewey, a founding member of the 1980's era “Mango Gang,” has created what he calls “comfort food with an edge,” a menu both familiar and evocative, infused with tropical ingredients from Florida’s rich cornucopia and the subtle nuances of international haute cuisine.

LaBORatory Night (pronounced La-BOHR-atory, like in the old Frankenstein movies) is an ongoing, informal event that has evolved over a period of more than fifteen years at the now defunct but never forgotten Biscayne Wine Merchants Bistro. Our ragtag crew of wine drinkers meets about once a month on Monday nights.
 

Every person or couple brings a bottle of wine, masked by a paper bag or other wrapper, which they think would be interesting to share with the group during dinner. Unless you thrive on verbal abuse, no white zinfandel, please. North One 10 has graciously agreed to waive its usual corkage charge for LaBORatory Night.

Depending on the group's size and earnestness, sometimes we have a serious discussion and analysis of the wines. More often than not, we just drink them.

Our original Biscayne Wine Merchants ground rules remain - three topics are verboten for discussion on Monday LaBORatory nights - sports, religion and politics. If you feel compelled to raise any of these topics, please come back on Tuesday. All other subjects are fair game.

Guests, spouses and designated drivers are welcome and encouraged. It's about as much fun as you can legally have on a Monday night.

Leeuwin Estate, one of the founding wineries of the now famous Margaret
River district, consistently produces wines that rank with the world's
finest. In 1972, following an extensive search for the area most
suitable to produce the best varietal wines in Australia, legendary
American winemaker, Robert Mondavi, identified the future site of the
Leeuwin vineyard.
Originally a cattle farm, Leeuwin Estate evolved, under the direction of
Denis and Tricia Horgan, with Robert Mondavi acting as consultant and
mentor. A nursery was planted in 1974 and the initial vineyards were
deep-ploughed, deep-ripped, emptied of stone, planned, pegged, measured,
marked and eventually planted by hand over a five year period from 1975.
Featuring state-of-the art facilities, the winery building was opened in
1978, celebrating with a trial vintage. Leeuwin enjoyed its first
commercial vintage in 1979, and was thrust into the international
spotlight when Decanter Magazine gave its highest recommendation to the
1980 "Art Series" Chardonnay in an international blind tasting.
Maintaining a team of highly skilled and dedicated winemakers, and now
under the direction of two generations of the founding family, Leeuwin
now exports to over 30 countries.

cedary perfume revealing hints of white chocolate, subtle wood, and
earth. Medium to full-bodied, restrained, and elegant, with supple
tannin, it does not possess the length or richness of the exceptional
1999, but it is well-made and pure. It should drink well for 10-12
years.

I tried a Leewin Chardonnay at the Miami Wine Fair a couple of years ago (it was located in the "VIP" section; retailed for around $75; sorry can't remember the name or vintage).  It was spectacular--and I am not given to hyperbole when it comes to describing wines; if anything, I tend to the contrary orientation.
 
Don't think I've had any other Leewin products, but judging from the past experience with that particular Chard, it should be worth the time and drive to the tasting to try its siblings.  At least we know the Leewin folk know how to make wine.  I don't think you can get lucky and make a fine product.

The Ritz-Carlton, Coconut Grove, Miami.The luxurious Amadeus Bar, with its wood paneled walls and cozy fireplace will be the setting for the series (as well as the outdoor Waterfall Patio location changes are noted above) every Friday from 7pm until 9:30pm.Cost is $10 per person and reservations are not required. Following the tasting, have dinner at the award-winning Bizcaya,an intimate restaurant offering indoor and al fresco dining under the stars and live music. My favorite event each year at the SoBe Wine Festival is the Friday
evening "BOB" tasting.
Who's BOB? It actually stands for 'best of the best.' And sure enough,
the quality of the wines poured are always excellent! For me it's always
fun to greet the many winery owners and winemakers whom we have come to
know over the years. Yet at the same time, there is always a bit of
excitement over the possibility of discovering something new, something
that I haven't tried before. It doesn't always happen. But this year it
did! The most impressive new wines I tried this year came from
Washington State, from the Betz Family Winery.

Bob Betz is somewhat of a local celebrity. Not only because of his 28
year tenure with local wine behemoth Chateau Ste. Michelle, or the fact
that he makes fantastic wines, but also because he has been making wine
since the near beginning of Washington's modern wine industry. Bob is
also one of the few people in the world (206 total) who have earned the
distinguished title Master of Wine (M.W.). Out of the 22 M.W.'s in the
U.S. the only other professional winemaker besides Betz to reach this
accomplishment is David Lake from Columbia Winery, also located in
Woodinville Washington. With a failure rate of 88% for those seeking to
gain this esteemed title, this is definitely no walk in the park.

The Betz Family Winery is a labor of love. The first vintage was 1997,
with a production of about 150 cases total. The goal here is to craft
2000-2500 cases annually, limiting themselves to a quantity that Bob can
directly watch over. By working with selected, dedicated grape growers
and employing methods that he believes craft superior wine, he hopes to
create wines of individual character, a blend of richness, balance and
pleasure. The winemaking here focuses on the purity of the individual
varieties and the vineyards they come from. Bob can do those things that
only a small winery has the luxury of doing: he knows every barrel.

raspberry, pepper, smoke, licorice, espresso and game. Lush on entry,

tad rustic. A serious, structured wine that's currently a bit tough,
with its components not yet in sync. Today this comes across as less
fruity and less voluptuous than the '02 release. 90(+?) points

Good medium ruby. Aromas of crunchy black raspberry, smoke, coffee bean
and baking spices. Rich and plummy, with a compelling creaminess for
this cuvee, along with excellent structure and grip. This very young
wine, which was bottled in May, closed up in the glass and showed
building tannins with aeration. Finishes very firm and long, with notes
of minerals and woodsmoke. 91(+?) points

THE WINES OF TERRE DI TALAMO
Terre di Talamo is located south of Grosseto, in the Tuscan Maremma. The
D.O.C. is Morellino di Scansano. The 52-hectare estate is on a hillside
facing the sea, and offers a view from the Port of Talamone to the
Argentario promontory. The vineyards extend over about 30
hectares. They are planted with Sangiovese, Merlot, Cabernet Sauvignon,
Cabernet Franc, and Vermentino. Terre di Talamo's vineyards are located
in the Morellino di Scansano and Maremma Toscana production areas. The
estate produces three wines: " Tempo", a Morellino di Scansano DOC "
Coro" LG.T Toscana, a Super Tuscan " Vento", a white Vermentino.
The terrains, which are quite stony, consist of a mixture of brown
clays, with exposures from southeast to northwest.

TERRE DI TALAMO VERMENTINO 2004

Aging: aged in French oak barrels
Made from 100% Vermentino organically grown in the Maremma Toscana. Its
medium-body, a result of the hot and sunny climate, is balanced by the
crispness typical of Vermentino grapes,allowing for a wide range of food

TERRE DI TALAMO MORELLINO DI SCANSANO 2004

Grapes: Morellino di Scansano,Sangiovese, Alicante, Cabernet.
Aging: aged in French oak barrels
This wine is fermented in stainless steel tanks and then aged for 3
months in barrels. Supple, medium-bodied and fragrant, it is superbly
rich, and ruby-red in color. Classic Maremma characteristics are evident
on the nose, with crisp fruit fragrances melding beautifully with earthy
notes. The palate exhibits a solid structure with impressive depth and a
judicious equilibrium between alcoholic warmth and tannic weave. Very
long and tasty finish. It is a perfect match for roasts, stews,
frittatas and truffles.

THE WINES OF CASTELLO DI BOSSI
Castello di Bossi is located in the southern half of the Chianti
Classico production zone, in the Comune of Castelnuovo Berardenga. The
area's wines tend to be fuller and more highly structured than those of
the rest of the Chianti Classico zone, closely resembling those of the
Montalcino area. The Castello di Bossi estate extends over 650 hectares,
124 of which are under vine. Castello di Bossi 's three principal
varietals are Sangiovese, Cabernet Sauvignon, and Merlot. Castello di
Bossi first planted Cabernet and Merlot about 40 years ago, and was
among the first in the Chianti Classico zone to plant them. The
predominant terrains are tuffs, yellow clays, calcareous sands, and
broken stones. The average elevation of the vineyards is about 350
meters above sea level, while their exposure varies from southeast to
west.
The Bossi Castle is located at the center of the estate. The first
tower, built in about 1099, shows the area's early strategic importance.
In about 1450 the early keep was expanded into the four walled fortress
visitors can see today.

THE WINES OF RENIERI
The Renieri estate extends over about 128 hectares, of which 28 are
dedicated to vineyards.
Renieri is located in the southern part of the territory of Montalcino,
facing Monte Amiata.
The vineyards are at an altitude of 400 meters above sea level, and
enjoy an almost 360 degree exposure, from east to northwest. The soils
at the Renieri estate are predominately volcanic, with calcareous soils
and are interlaced with red clays and tuffs. The predominant varietal
is, of course, Sangiovese. The Renieri home is a typical country
farmhouse made of stone, and dates to the 1700s, while the winery, which
extends over about 1000 square meters, is almost entirely below ground

Aging: gravity feed and aged in french oak barrels.

ABOUT THE PELLER WINERY
Just over 40 years ago, a Hungarian immigrant named Andrew Peller opened a
modest winery in British Columbia's Okanagan Valley. He was 58 years old. At an
age when most people are planning their retirement, he was planting the roots of
a dream that would eventually be passed along and realized by his son Joe, and
later by his grandson John. In the beginning Andrew's goals were very much along
the lines of being part of introducing wine to Canada, back in the 60's and 70's
when table wine consumption was minimal. It was always his belief that as the
Canadian community matured culturally that eventually wine would and could
become a major part of its lifestyle the same way as it did in Europe. And that
means not just the wine itself but the whole concept of really appreciating food
and wine together in a way very much different than only a very special occasion
type of product. That was Andrew's view in the early days that motivated him to
start a winery.

ABOUT CANADIAN ICE WINES
	 The discovery of Ice wine was accidental. Producers in Franconia, Germany made
virtue of necessity by pressing juice from frozen grapes in 1794. They were
amazed by the high sugar concentration. It was not until the mid 1800's that Ice
wine was intentionally made by the winery. This occurred in the Rheingau.
	 Walter Hainle made the first (very small scale) Ice wine in Canada in 1973. The
first commercially available Canadian Ice wine was made by Hainle Vineyards in
1978. Canada today is the largest producer of this rare, rich and sweet
ambrosia, with the lion's share coming from Ontario's Niagara Peninsula. Volume
of Ice wine produced in Ontario has risen phenomenally commensurate with demand.
Sales in Vintages alone rose from 25,000 bottles in 1992-93 to an estimated
120,000 bottles in 1996-97. Sales continue to grow at a rate of over 50% per
annum.
	 Grapes are left on the vine well into the winter months. The resulting freezing
and thawing of the grapes dehydrates the fruit, and concentrates the sugars,
acids, and extracts in the berries, thereby intensifying the flavors and adding
complexity to the wine made from it.
	 The juice from Ice wine grapes is about one-fifth the amount you would normally
get if you pressed unfrozen grapes. To put it another way, a vine will normally
produce sufficient grapes to make a bottle of wine; but frozen grapes would
produce only one glass of Ice wine
	 The frozen grapes are pressed in the extreme cold. The water in the juice
remains frozen as ice crystals, and only a few drops of sweet concentrated juice
is obtained. This juice is then fermented very slowly for several months,
stopping naturally.
	 The finished ice wine is intensely sweet and flavorful in the initial mouth
sensation. The balance is achieved by the acidity, which gives a clean, dry
finish. The nose of ice wine recalls lychee nuts. The wine tastes of tropical
fruits, with shadings of peach nectar and mango.
	 Canada is the largest ice wine producer in the world with 40 to 50 vintners in
Ontario and British Columbia producing the liquid gold. Asia is the largest
export market for Canadian ice wine.
	 Because of the lower yield of grapes and the difficulty of processing, ice
wines are more expensive than table wines. The high sugar levels lead to a
slower than normal fermentation. They are often sold in half-bottles (375 ml).
	 Typical grapes used for ice wine production are: Riesling, Seyval Blanc, Vidal
Blanc , and, interestingly, the red grape Cabernet Franc . Cabernet Franc ice
wine is a light pink color, like most ros wines.
	 Genuine ice wine must be naturally produced. No artificial freezing is allowed.
The signature of a great ice wine is the balancing tension between the sweetness
and the acidity, with seductive tropical fruit flavors followed by a crisp,
bracing finish, which when the wine is swallowed, is vividly refreshing. This
brilliantly focused acidity distinguishes the ice wine from Sauternes and
accounts for the freshness.
	 For over 20 years Europeans banned Canadian ice wine from their markets,
stating high sugar content as their reason. The ban was lifted in May 2001.

DEBUTING FROM LA SPINETTA!
RISERVA MAGNUMS!

Giorgio Rivetti has been so pleased with recent vintages that he decided to make
a riserva bottling of some of his wines. Only the grapes from the older vines
(45 years older or more) in higher positions in the respective vineyards go into
the riservas. Also, the riservas mature in new oak barrels for nine months
longer than the non-riserva bottlings making a total of 20 months for the
Barbarescos and 32 months for the Barolo. The riservas will only be made in top
vintages and will only be bottled in magnums!
NOTE: As of yet only the Wine Spectator has reviewed these wines. We have
included their reviews. That being said, a quick look at both the Tanzer and
Parker reviews shows that all the non riserva wines scored in the mid 90s! The
Riservas should merit scores even higher!

Last week we had the opportunity to try three wines from a new Sonoma
winery, Terlato. Those of you whom follow the "wine biz" make recognize
this name as the owners of Paterno Imports, whose most successful wine
is Santa Margherita, the simple light white that put Pinot Grigio on the
map in the United States.

Why is this important? There is a tendency in the wine world to assume
that big is bad. And in truth, often this image is well deserved. If you
are striving to produce uniquely terrior and varietal driven wines you

when you make a few million cases of wine and can sell them. You make a

makes millions of dollars and then reinvests it into small high quality
estates. Consider just a few of these names.
Jess Jackson created Kendall Jackson and parlayed it into Verite and
Lokoya. The Mariani family created Rieunte Lambrusco and used the
dollars to create Banfi Brunello di Montalcino! Did you know that
Lindeman's and Penfold's Grange Hermitage share the same parentage? And
let us not forget that Mouton Cadet and Mouton Rothschild share the same
ownership. And so it goes- ordinary wines often create the money that
gives winery owners
The cash flow to concentrate on making unique, exceptional wines- the
kind of wines that wine reviewers go 'ga-ga' over - the kind of wines we
want in our cellars!

And so Terlato Vineyards was born with the goal of producing four wines:
a Pinot Grigio from Russian River, a Syrah from Dry Creek, the third
named Angels' Peak, from Napa Valley, a Bordeaux varietal blend and the
fourth, Devils' Peak, a variation Bordeaux varietal blend.

Most importantly , we have tried their first three releases. They are
delicious!

Besides Catherine, who by now knows the content of all my wine presentations by
heart, I would like the opportunity to deliver the WINE, HEALTH AND DISEASE talk
to a group of real wine folk before trekking all the way to Oregon in July to
deliver it at the Society of Wine Educators conference.

Here is where y'all come in.  I am looking for folk interested in learning about
the positive and negative health aspects of wine and who will then candidly
critique the show, thus helping put the polishing touches on the final product.

I use a PowerPoint presentation to supplement the discussion; it will last no
more than 1.5 hours.  I am flexible about time and place--condominium rec room,
restaurant, living room, wine shop, wherever. . . as long as I can plug in the
projector and personal computer.

By the way, the presentation is approved by the Florida Bar for a 1 hour
Substance Abuse continuing legal education credit.  So, the lawyers in the crowd
may want to host it at one of their offices, learn about wine and get CLE
credit!

Bright ruby-red. Blackberry and cassis aromas display a liqueur-like ripeness. A
rich, concentrated fruit bomb in the mouth, with concentrated flavors of black
fruits, violet and licorice. Finishes long and powerful. Impressively rich for a
barbera from vines less than ten years old. 88-89 points

Saturated bright ruby. Brooding aromas of pungent spices; less fruit-driven and
perfumed than the Gallina. Fat and hugely rich, with impressive ripeness of
fruit. Complicated by pungent spices and incisive minerality. Comes across as
more tannic than the Gallina, but also very long and ripe, with a late note of
bitter chocolate. Rivetti describes his 2003 barberas as between the 2001s and
2000s in style: rich and sweet but also tannic and classic. 91-92 points

Bright ruby. Sweet aromas of blackberry, violet and bitter chocolate. Rich, lush
and impressively concentrated, with the depth and complexity of fruit to support
its 100% new oak. Wonderfully fresh barbera that should be approachable upon
release but capable of aging. Finishes with notes of tobacco and woodsmoke.
90-92 points

Full medium red. Aromas of graphite, rose petal and gunflint. Plum p and full in
the mouth, but also highly aromatic, thanks to its floral and mineral
components. Still, this rather saline, dry, serious Barolo is a bit youthfully
aggressive today, and much less obviously sweet than Rivetti's Barbarescos.
Finishes with building tannins. Very promising young Barolo, from chalk-rich
soil similar to that found in Gallina and Starderi. 92(+?) points

alcohol, allowing a long sweeter finish

ABOUT LA SPINETTA AND THE RIVETTI FAMILY:
	 The Rivetti family story begins in the 1890s, when Giovanni Rivetti,
grandfather of the three Rivetti brothers, Carlo, Bruno and Giorgio, left
Piedmont for Argentina. Like many Italians of that time, he dreamed of returning
rich and a powerful man, perhaps even one day able to make a great wine in his
homeland.
	 He never did, though his son, Giuseppe (nicknamed Pin) did. Pin married Lidia,
bought vineyards and began to make wine. In 1977 the family took up residence at
LA SPINETTA (top of the hill) in Castagnole Lanze. It was the heart of the
Moscato d'Asti country, home of a rather light and simple dessert wine. But the
Rivettis believed that Moscato had the potential for greatness and set out to
prove it by making Moscato Bricco Quaglia and Biancospino.
	 Eventually though the family's vision was even grander. In 1985 LA SPINETTA
made its first red wine, Barbera C di Pian. After this many great reds
followed: In 1989 the Rivettis dedicated their red blend Pin to their father. In
1995 they started to make their first Barbaresco, Gallina. In 1996 and 1997 the
Barbarescos Starderi, Barbera d'Alba Gallina and Barbaresco Valeirano follow. In
1998 premiered the Barbera d'Asti Superiore.
	 In 2000 the family's ambition of also making a Barolo became reality. The
Rivettis acquired vineyards in Grinzane Cavour and built a state of the art
cellar, Barolo Camp. Since 2003 they are delighted to welcome visitors also at
Camp, near Grinzane Cavour.
	 In 2001 LA SPINETTA expanded over the borders of Piedmont and acquired 65
hectares of vineyards in Tuscany, between Pisa and Volterra to make three
different 100% Sangiovese wines.
