HAM CASSEROLE

1 (6 1/2 oz.) can chunky ham
1 can cream of mushroom soup
1 small can sliced mushrooms
1 small can peas and carrots
1 c. grated cheese
2 c. macaroni
1/2 soup can milk

Cook macaroni in 2 quarts of water until tender. Drain
macaroni and put in a large casserole dish. Add all other
ingredients and mix well. Top with a few small slices of
cheese. Bake in 350 degrees oven until mixture bubbles and cheese
melts.
You can substitute chunky chicken, chunky turkey or tuna
for the ham.

FAJITAS

1 1/2 lb. beef skirt steaks
1 c. picante sauce
1/4 c. vegetable oil
1 tsp. lemon juice
dash of pepper
dash of garlic powder
12 (10-inch) flour tortillas, heated
Chunky Guacamole (recipe follows)

Pound meat with meat mallet to tenderize; place in plastic bag. Combine
picante sauce, oil, lemon juice, pepper and garlic powder; pour into bag and
fasten securely. Refrigerate 3 to 24 hours, turning several times. Drain
meat, reserving marinade. Place meat on grill over hot coals or on rack of
broiler pan; cook 5 or 6 minutes on each side until well done, basting
frequently with reserved marinade. Remove from grill; slice across grain
into thin strips. Place meat on tortilla; top with Chunky Guacamole and
additional picante sauce. Roll up. Makes 6 servings.

Chunky Guacamole:
2 ripe avocados, peeled, seeded and diced
1 medium tomato, seeded and chopped
1/3 c. green onion, sliced
1/4 c. picante sauce
1 tsp. lemon juice
1/4 tsp. salt
Combine all ingredients, mixing lightly. Chill. Makes about two and one half
cups.

Bar-B-Q Pork meatloaf


1/4 cup celery, finely chopped
1/4 cup onion, finely chopped
1 Tbsp. cooking oil
2 eggs, beaten
1/2 cup bread crumbs
1/2 cup milk
1 tsp Cookies Flavor Enhancer
1/2 tsp oregano
1/2 tsp sage
1-1/2 lbs ground pork
1/2 cup Cookies Western Style Bar-B-Q Sauce
4 oz. shredded cheddar cheese


Saute celery and onion in hot oil for 5 minutes or until tender, not brown.
In large bowl, combine eggs and milk. Stir in Cookies Flavor Enhancer,
oregano, celery and onion. Add bread crumbs and ground pork. Add more bread
crumbs, if needed, to make mixture soft to handle. Put in pan and shape into
loaf. Brush Cookies Bar-B-Q Sauce on the top. Bake at 350? for 1-1/2 hours.
Brush on more Cookies Bar-B-Q Sauce about halfway through the baking
process. Remove from oven and sprinkle on the shredded cheese. Put back in
oven for 3 - 5 minutes until cheese melts.

Blue Plate Beef Patties
1 egg
2 green onions with tops, sliced
1/4 cup seasoned bread crumbs
1 tblsp prepared mustard
1 1/2 pounds ground beef
1 (12 ounce) jar beef gravy
1/2 cup water
2 to 3 tsp prepared horseradish
1/2 pound fresh mushrooms, sliced
In a bowl, beat egg; stir in onions, bread crumbs and mustard. Add beef
and mix well. Shape into four 1/2 inch thick patties. In an ungreased
skillet, cook patties for 4-5 minutes on each side or until meat is no
longer pink; drain. In a small bowl, combine gravy, water and horseradish;
add mushrooms. Pour over patties. Cook, uncovered for 5 minutes or until
mushrooms are tender and heated through. Makes 4 servings.

Mushroom Beef Patties
1 pound ground beef
1/4 cup dry bread crumbs
2 tblsp milk
1 tblsp Worcestershire sauce
1 tsp salt, divided
1/2 tsp pepper
1/2 tsp garlic powder
1/2 pound fresh mushrooms, sliced
1 tsp dried basil
5 tblsp butter or margarine, divided
2 tblsp all-purpose flour
1/2 cup half and half cream*
1/2 to 3/4 cup water
1/4 tsp hot pepper sauce
1/4 cup shredded cheddar cheese
2 tblsp chopped green onions
*I have substituted canned evaporated milk for the half and half with
good results. Combine beef, crumbs, milk, Worcestershire sauce, 1/2 tsp
salt, pepper and garlic powder; mix well. Shape into 3 to 4 oval patties;
cook on both sides until no longer pink. Cook mushrooms and basil in 2
tblsp butter over medium high heat until tender. Increase heat to high;
cook and stir until most of liquid evaporates. Melt remaining butter; stir
in flour. Gradually blend in cream. Add 1/2 cup water, hot pepper sauce
and remaining salt; cook and stir on low until thickened and bubbly. Cook
and stir for 2 minutes longer. Add enough remaining water to make a medium
thin sauce. Add mushrooms; heat through. Serve over beef patties; top with
cheese and onions. Makes 3-4 servings

Grilled Southwestern Pork Chops

1 T. chili powder

1 T. vegetable oil

1 tsp. ground cumin

1/4 tsp. salt

1/4 tsp. ground red pepper (cayenne)

1 large clove garlic, finely chopped

2 1/2 lbs. pork loin or rib chops, about 1/2-inch thick (8 chops)

Mix together all ingredients except pork. Cut outer edge of fat on pork

chops diagonally at 1-inch intervals to prevent curling (do not cut into

meat).

Spread chili powder mixture evenly on both sides of pork chops. Cover and

refrigerate at least 30 minutes but no longer than 24 hours.

Heat coals or gas grill. Cover and grill pork 4 to 6 inches from medium heat

10-12 minutes, turning frequently, until slightly pink when cut near bone.

Makes 8 servings.

Crockpot Hawaiian Pork



3 lb boneless pork loin or sirloin roast, rolled and tied

6 whole cloves

1/2 t nutmeg

1/4 t paprika

1/4 c ketchup

2 T orange juice

2 T honey

1 T soy sauce

2 t lemon juice



Place roast on rack and broil 15-30 min or until brown. Stud with

cloves. Place in slow cooker on a meat rack. Sprinkle with nutmeg

and paprika. Stir together rest of ingredients. Pour over roast.

Cook on low 10-12 hrs (high 4-6 hrs). Remove roast from crock.

Thicken juices with 1-1/2 T cornstarch and 2 T water. Cook on high

until thickened.

Marinated Pork Chops

5 green onions, chopped
3/4 cup vegetable oil
1/2 cup soy sauce
1 1/2 teasp. ginger
1 teasp. garlic powder
3 tablsp. honey
2 tablsp. vinegar
2 tablsp. unsweetened pineapple juice
4-6 pork chops, trimmed

Combine first 8 ingredients, blending well. Pour over pork chops
and marinate in refrigerator for several hours. Broil chops in
oven. (This marinate is also great for flank steak!)
