Zesty Broccoli Cauliflower Gratin

1/2 Cup bread crumbs -- dried
1 cup cheddar cheese -- finely shredded
2 Cups Broccoli Florets -- cut in small pieces
2 Cups Cauliflower Flowerets -- cut in small pieces
1 Tablespoon butter -- melted
1 Tablespoon Mustard

Preheat oven to 425?. Combine bread crumbs and cheddar cheese; stir bread
crumb mixture well and set aside. Arrange broccoli and cauliflower in a
steamer basket over boiling water.Cover and steam 4 minutes or until tender
crisp. Drain vegetables and place in a 1 1/2 quart casserole dish coated
with cooking spray. Combine margarine, mustard and white pepper in a small
bowl; drizzle over broccoli and cauliflower and toss well. Sprinkle
breadcrumb mixture over vegetables, and bake at 375? for 20 minutes or
until thoroughly heated.

Chicken Yum-Yums

1 cup all-purpose flour
1 teaspoon black pepper -- or to taste
4 skinless boneless chicken breast halves -- cubed in
1-inch pieces
1/3 cup soy sauce
1/2 cup sugar
1 tablespoon garlic -- crushed
2 teaspoons red pepper flakes
1/2 cup vegetable oil

Heat oven to 350? F. Combine flour and pepper in a bowl or Ziploc baggie.
Coat chicken pieces in flour mixture until fully coated. Heat oil in frying
pan until hot enough to sizzle when adding a sprinkle of flour. Add the
floured chicken and brown on all sides. (Do not let it get fully cooked,
but just until it gets a nice brown crust.) Drain the pieces on a paper
towel. In a 13x9-inch baking pan, place pieces of chicken in a single
layer. In a measuring cup or small bowl, mix the soy sauce, sugar, crushed
garlic and red peppers. Stir so that it is well blended and the sugar is
mostly dissolved. This will be a bit thick; it will become a glaze and gel
up during the cooking period. Pour the glaze over the chicken and mix
around so all the pieces are coated. Bake for 30 minutes at 350? F,
stirring the pieces every 10 minutes to get them evenly coated with the
glaze.

Serve warm with toothpicks for spearing.

Cucumber and Yogurt Dip

flavors to settle. Accompany this dip with toasted pita triangles.

Mozzarella, Zucchini and Anchovy Toasts

1 tablespoon olive oil
4 small zucchini -- trimmed and sliced
2 tablespoons finely chopped fresh parsley
4 slices fresh Italian country bread (large slices) -- 3/4
inch thick
12 slices mozzarella cheese
8 anchovy fillets -- drained and chopped

Preheat oven to 400? F. t olive oil in large skillet over med-high heat.
Add zucchini and parsley and saute until zucchini is tender, about 5
minutes. Remove from heat. Place bread slices on large baking sheet. Bake
until crisp, about 10 minutes. Arrange 3 slices mozzarella on each bread
slice. Top with zucchini, dividing equally. Sprinkle with anchovies.
Return to oven and bake until cheese melts, about 5 minutes. Serve hot.

Oven Fried Zucchini

2 medium zucchini
2 teaspoons vegetable oil
2 tablespoons water
3 tablespoons seasoned bread crumbs
1 tablespoon grated Parmesan cheese
1/4 teaspoon garlic salt
1/8 teaspoon pepper

Pre-heat oven to 475? F. Spray cookie sheet with non-stick spray. Combine
bread crumbs, Parmesan cheese, salt or garlic salt and pepper in a shallow
dish and set aside. Cut zucchini in quarters lengthwise, cut spears in half
or thirds. Put zucchini spears in a plastic bag, add oil and water, close
bag and shake so spears are lightly coated with oil. Roll each spear in
bread crumb mixture to coat lightly. Arrange coated spears in a single
layer on prepared cookie sheet. Bake 7 minutes or until browned and
crunchy.

1/2 cup soy sauce

ginger in a shallow glass dish. Thread two pieces of chicken onto 4"
skewers. Marinate in sherry mixture for 2 hours. Grill or broil for about
8 minutes on each side. Serve hot.
