Yes the dates of the books.... some actually have machine marbled Victorian era papers, implying they may have been old books but rebound at those later dates....

The main thing I have heard is to not use the same tools for both, because the acrylic on the combs will repel the watercolor paint, or cause it to break up....

How you keep your papers depends a lot on whether you want them bone dry or with a bit of moisture. I prefer the latter since I find that it helps them go down...
