Eggs Benedict David

Amount Measure Ingredient -- Preparation Method

2 English muffins -- halved and buttered
1/2 avocado
4 eggs -- poached
---Hollandaise sauce---
2 tbsp vinegar
1/4 tsp white pepper
1/4 c water
4 egg yoks
2 1/2 tsp lemon juice
1 c butter -- divided into thirds
1/4 tsp salt

Toast muffins until lightly browned. Cut avocado in half and then
slice on top of muffins. Top with poached egg, and cover with
hollandaise sauce.
---------HOLLANDAISE SAUCE---------
Combine vinegar, pepper, and water; boil until liquid is
reduced by half. Combine egg yolks, lemon juice, and 1/3 cup butter
in top of double boiler. Cook over hot (not boiling) water, stirring
constantly, until butter melts. Add another third of butter, stirring
constantly; as sauce thickens, stir in remaining butter. Add vinegar
mixture by 1/2 teaspoonfuls, stirring constantly to keep the sauce
from curdling. Add salt, and cook until thickened.
